can I get these items online?  The only sweetener I've really found readily available where I live is Splenda or wal-marts brand.  And, also anyone can give me an idea of the cost of these products so I can figure them into the budget  ;D

This makes 12-14 tacos which you could either have 1 -2 per person

First to make the shredded chicken mix which makes alot so you could freeze some up or use some in omelets etc.

2 lbs. chorrizo sausage casing removed
4 lbs. boneless skinless chicken breast

I cook the chicken when it's still half frozen on the stove top covering the pan with a lid.  When it's half done I add the chorrizo sausage and cook the chicken and chorrizo together in the pan until the chicken is done.  After the chicken is no longer pink I shred the chicken (pull it with 2 forks til its shredded fairly well and cook for about 10 - 15 mins more soaking up the juices of the chorrizo sausage.  It makes a lot of the chicken mixture.


so now on to the taco bake:

since this recipe makes 12 -14 tacos (I have a large family) so you will half to adjust for smaller amounts

1 - 2 low carb tortillas and 1/4 cup of chicken chorrizo shred mix (fairly generous portion) placed in ea. taco and halved over

place tacos in a glass baking dish comparable to the amt you are making (overlapping the tacos a bit to fit the dish is fine)

this is the topping that I made then to spread evenly over the tacos: 
      8 oz. can low sugar tomato sauce
      1/2 med. onion chopped
      1 tomato chopped
      3 Tbsp. chopped jalapeno (I used dried)
      1 Tbsp. garlic minced
blend the topping ingredients in a bowl and mix and then spread evenly over the tacos

final step is to sprinkle fiesta blend cheese over the entire dish (I use 2 - 2 1/2 cups cheese)  and bake for 20 mins at 350 F.

this is a good kids recipe as well
