Meal Plans / MommaB's menu 2015/16

Even though I haven't been actively posting on the FTS forum, I have stayed true to the FTS lifestyle. I have found that I do better when I post what I eat, accountability is important, apparently.
So here goes:

12/21/15

Breakfast:
2 egg (1.2 carbs) omelet with Benecol (0 carbs) & cheddar cheese (0 carbs)
Coffee w/FTS Zero and Heavy Cream (0 carbs)

Lunch:
Leftover turkey burger (0 carbs) w/cheddar cheese (0 carbs), low sugar ketchup (.5 carbs) & mustard (0 carbs)
Leftover sauteed swiss chard (2 carbs)

Dinner:
Mushroom/Kale soup (5.5 carbs)
Parmesan chicken strips (0 carbs)
Low Carb fudge (1 carb)
Decaf. (0 carbs)

Total carbs for the day: 10.2

Water (so far): 64 oz.
Sleep (last night): 6 hours
Exercise: 20 min. on recumbent bike

Ask Umpa / alfalfa, broccoli, and red clover sprouts?

Hey sweet lady!! I am back, really never left, just have been silent for a while! lol
I have started growing sprouts in my kitchen with the kids and love them on, in and as my salad (if I have no other greens)! My question is: are the sprouts high in carbs, or are they ok!?! I usually have a romaine salad with 1/2 cup each alfalfa, broccoli, and red clover sprouts w/ 1T. olive oil and balsamic vinegar and I was double checking that the carb count for the sprout part isn't too high!?!
Trying to go more toward vegetarian and less meat, so am looking for alternatives!!

Apparently I do way better when I post what I eat, so I will start posting everything that goes in my mouth, here!! lol  :o

Tuesday, 2/12/13

flax pancake w/sf syrup - .6 carbs (egg)
1 sausage patty - .5 carbs
coffee (3 cups throughout the morning) 4 drops Zero & 2T heavy cream in each - 0 carbs

leftover MommaB's chili w/1T sourcream - 4 carbs
Jo's cornbread - 1 carb

almonds - 3 carbs

ground beef browned w/italian seasoning on fresh grated romano cheese and salad - 1 carb

decaf. (2 cups throughout the evening) same as morning coffee - 0 carbs

way too big a bowl of whipped cream, made with heavy cream, zero, and vanilla - 0 carbs

I only drank 64 oz of water today!   :-[
I only slept 5 hours  :P

I have started doing a little bit of exercise, but did not do any yesterday!

I will post today's at the end of the day and will hopefully do better than yesterday, since I know I will be posting! <grin>

Dinner Recipes / Cream of Broccoli, Cheese soup

I know that I got this recipe on the forum, but can't seem to find it, so I thought I would re-post!! We had this tonight and the kids LOVED it!!!  ::)

2 cups cooked soft broccoli
2 cups unsweetened almond milk
2 cups Doug’s Rich and Creamy Alfredo sauce: http://www.fattoskinny.net/index.php?topic=4380.0
Salt and pepper to taste


Puree the broccoli in a food processor
add the almond milk into the food processor and process for a minute
pour the mixture into a sauce pot and add the Alfredo sauce
stir well and taste, adjust salt and pepper
bring to a boil, reduce to simmer for 15 minutes
Add shredded cheddar cheese to top of each bowl when serving.

I added some cubed, leftover ham too and it was delicious!!!!  ;D

Hey Umpa!

I always make Doug's crustless pumpkin pie (http://www.fattoskinny.net/index.php?topic=1216.15) during the holidays and I'm wondering if I can use Zero instead of xylitol!?! If so, is it 24 drops = 1/2 cup?

Thanks for the help! Looking forward to enjoying pumpkin pie without the sugar alcohol side effects! lol  :o

Dinner Recipes / Shredded Barbequed Chicken

My kids take turns cooking dinner once a week and we found this recipe and were able to convert to FTS friendly!! Hope you enjoy it as much as we did!!!   :o

Pre-heat oven to 325F

In a large skillet heat 2T. olive oil and brown 3 cloves of chopped garlic.
Add boneless, skinless chicken breasts and coat with garlic & oil.

Pour 12 oz. bottle of sugar free barbeque sauce over chicken. (I like the Walden Farms honey barbeque sauce)

Bring to a boil, cover and bake for 1 1/2 hours.

Shred chicken with 2 forks and add some of the sauce from the pan!!

YUMMY!!!! ;D

The only carbs are in the garlic!! (3 carbs)

General Discussion / Help with leg cramps!!!!

Hey everyone!

I was awakened last night by horrible cramps in my legs and feet! Cramps in places (like the side of my shin) that I didn't know I had enough muscle to cramp!!! It's awful and has happened on and off for a while now!

If it was one of my kids, I'd tell them to eat a banana, but I can't do that! I take a really good multi-vitamin each day! HELP!!!!

Thanks in advance! Can't go through another night like that!!!  :P

General Discussion / How low can you go!?! (Challenge/Contest)

I need to get the weight loss moving in the right direction again, so I'm starting a new contest/challenge! Basically I want to see how low in carbs we can eat for a week or more if you'd like to do that!!

If you'd like to join this challenge, post your menu, at the end of each day, including everything that you put into your mouth and how much you eat along with the carbs that you counted for those things! (ex: 6 (or however many you eat) cheddar pork rinds - 0 carbs OR 1 cup unsweetened almond milk - 0 carbs, etc.) Also make sure you include how many ounces of water you drink during the day!!!

This accountability of posting what I eat really helps me to get back on track and start seeing the pounds drop off again! I don't know about you, but "carb creep" has begun happening in my house mostly with my portions getting larger than they should be!!

So join me in getting back on track and let's see how low you can go!!!  ;D

Beverage Recipes / Shake that can be made in a shaker cup

I just placed a pretty large Netrition order and was prompted to choose a free gift, so I got a shaker! When I received my order today I was happy to see that it was a shaker cup! Now I need help coming up with shake recipes that are yummy, filling, and don't need a blender!!

Any and all ideas would be awesome!!!  ;D

Hey everyone!! As of this morning, I'm actually 1 1/2 pounds closer to One-derland!!! I've lost the weight that I gained from eating too large portions and actually moved my ticker today!!!

Hey everyone! I've been stalled out and doin' a huge yo-yo thing up to almost 10 lbs. above my lowest!! (Not changing my ticker though, cause that would be depressing! lol)  :o

With all that said, I've started writing down everything that crosses my lips and will post for your help and support until the scale starts to move in the right direction again!!  ;)

Here goes:
2/27/12
Breakfast
     2 1/2 cups coffee w/ 3T. sf torani coffee syrup & 1T heavy whipping cream (0 carbs)
     Nantahala sausage (local brand), 2 patties (1 carb)
     3 fresh eggs fried in Benecol (1.8 carbs)

Snack
     1/2 bag cheddar pork rinds, 1 1/2 oz. (0 carbs)
     4 - i inch chunks cheddar cheese (0 carbs)

Lunch
     3 - Nathan's hot dogs w/1 T. reduced sugar ketcup (3 carbs + 1 carb)
     hot tea w/sf torani syrup (0 carbs)
     1 - home-made sugar cookie (1/4 carb)

Dinner
     chicken breast (0 carb)
     1 c broccoli (3 carbs)
     1 - sf home-made cookie (1/4 carb)

Evening "dessert"
     sugar-free home-made pumpkin pie (3 1/2 carbs) w/ LOL sf whipped cream (0 carbs)
     decaf coffee w/sf torani syrup & heavy cream (0 carbs)

I drank approx. 56oz. of water during the day
     3 cans of diet soda

I got 7 hours of sleep the night before! (I'm trying to do better at this, but it's a process! lol)  ::)
I do not exercise right now, except running after my 4 kids!  :D

ok everyone...let me have it!!! What am I doing wrong that I should do differently!?!

Ask Umpa / Broccoli Cheese Soup

Hey Umpa!!

I'm really craving broccoli cheese soup and have searched all over and can't find a recipe on the forum for this! I'm sure there is one, but I can't find it with the search! I found one on foodnetwork's website and am posting here for your help in converting it! (I know what some of the conversions will be, but don't want to mess it up, so HELP!!!)   ::)

Ingredients
1 stick butter
1 whole onion, diced
1/3 cup all-purpose flour
4 cups whole milk
2 cups half-and-half
1 pinch nutmeg
4 heads broccoli, cut into florets
Salt and freshly ground black pepper
3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.)
Chicken broth, if needed

Directions
Melt the butter in a pot over medium heat, and then add the onions. Cook the onions for 3 to 4 minutes, and then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in the milk and half-and-half. Add the nutmeg, and then the broccoli, a small dash of salt and plenty of black pepper.

Cover and reduce the heat to low. Simmer until the broccoli is tender, 20 to 30 minutes. Stir in the cheese and allow to melt.

Taste the seasonings and adjust if needed. Then either serve as is, or mash with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree in a blender, return the soup to the heat and allow to heat back up. Splash in some chicken broth if needed for thinning.)

Ok...so here's my recipe for fudge...hope there's a fts alternative for this one!!!  ;D  I just bought some WF marshmallow dip hoping there was some way to make a little bit for me!!!   ::)

Fantasy Fudge

6 cups sugar
1 1/2 cups margarine
1 1/3 cups evaporated milk
2 - 12oz. pkg. semi-sweet chocolate chips
1 - 13oz. jar marshmallow cream
2 tsp. vanilla

Combine sugar, margarine, & milk in a heavy 5 qt. pot; bring to a full rolling boil, stirring constantly. Continue boiling for 5 min. over medium heat, stirring constantly to prevent scorching. Remove from heat; stir in chocolate pieces until melted. Add remaining ingredients; stir until well blended. Pour into 2 greased 13x9 inch baking pans. Cool at room temp. & cut into squares.

MommaB’s Meatloaf

2 pounds ground beef (0 carbs)
½ cup onion diced (7 carbs)
1T garlic powder (0 carbs)
1 ½ tsp onion powder (0 carbs)
½ cup Walden Farms barbeque sauce (0 carbs)
2 eggs (2 carbs)
1 bag plain pork rinds – mashed (0 carbs)
½ cup flax meal (0 carbs)

Combine all ingredients. Form into a loaf and place in the middle of a cookie sheet with sides so the grease doesn’t spill into the oven. Bake at 375 for 50 min. to 1 hr.   

9 carbs for whole recipe!

I serve this with caulimash and a nice green salad!!! Yummy!!!   :D

Dinner Recipes / Santa Fe/Taco Soup

This is a family favorite! It makes a huge amount and you may want to half it or plan to freeze leftovers for a quick easy lunch!! I have a large family and we still have leftovers!  :o

Santa Fe/Taco Soup

Ingredients:

2 pounds ground beef (0 carbs)
1 cup scallions, chopped (7 carbs)
1 T. garlic diced (3 carbs)
1/2 cup heavy cream
2 tsp. apple cider vinegar
½ tsp. cumin, ½ tsp. garlic powder, 1 tsp. chili powder, ½ tsp. oregano (replaces the taco seasoning packet) (0 carbs)
2 cups water
2 large fresh tomatoes diced (10 carbs)
2 - 15 oz cans black soy beans drained (7 carbs) - put these in when you cook ground beef so they have time to soften up. (Thanks Umpa for this tip!!!)
1 pkg. frozen cauliflower made into caulimash (6 carbs)

Brown beef, onion, & garlic. Drain. Add taco seasoning replacements, heavy cream, & vinegar. Combine rest of ingredients. Simmer 2 hours. Add more water if too thick. Garnish with sour cream and cheddar cheese. 31 carbs for whole recipe!
