Gotta watch the Dr. Oz show today.  Dr. Oz goes up against a scientist that supports our FTS way of life.  The scientist says what Drs are saying are not scientifically supported when it comes to weight loss. That carbohydrates cause fat due to a hormone issue (insulin). This we all know but so glad to see that it might make people stop and question if what they have always learned is correct science.

General Discussion / Started Exercise on Elliptical to tone

Hubby and I decided to spend our meager but grateful tax return on a modest elliptical machine from Walmart....both trying to get in shape/tone...he gained the 30+ lbs. I lost lol poor hubby...he says those 7 donuts just fell into his mouth last week...yeah right who are you kidding...restraint man restraint! lol  Any way I made it 30 min! Whew!

Lean On My Shoulder / Im in trouble-stuffing my feelings with food again

I won't go into a long account of details but for the last week or so I have been eating my feelings until last night I asked what' at my stores....I feel so overwhelmed.  It seems feelings I have about my new job and the stressors that come with being a supervisor of people that don't have the same care or work ethic as I do....but they are as busy as I and I feel I can't be upset with them so I turned it inward and tried to stuff it down down down.  It finally came up this morning and I feel so vunerable. 

I am trying to just let it all out instead of pushing it down but I still need to function.   I feel like I just want to lay in bed and just cry and hide from the world.  This job is not my bliss and I didn't feel right when I accepted it but my husband wanted me to take it to help out our financial situation.  I don't blame him or have any ill feelings about him.  I'm just miserable.  I need to create but I don't know what I want to do instead.  I know I should be grateful for my job when so many others are without so that also causes guilt for feeling the way I do.  I want to stop this eating before it sabotages my success but I don't know what to do instead of eating right now because I'm not feeling strong.

Do you miss having cinnamon twists or puffs from the fast food restaurants or grocery store.  I have been trying several different ideas and finally found a very simple solution that you won't believe.

Take a plate full of plain, unflavored pork rinds....yes I said pork rinds.  Melt some butter in the microwave and pour over the pork rind tops. 

Mix cinnamon and a sugar substitute like Truvia or Stevia.  Sprinkle over the the tops of the buttered pork rinds.

Walla!  You have your own cinnamon puffs.

Note:  I thought I had come up with something new but while I was looking for images for this post I saw someone else had posted a recipe on a recipe site.  Well you know what they say...."great minds think alike" and "necessity is the mother of invention".

I have found a great new product for low-carb deli style sandwiches and crispy crust pizza.  These are very substantial and do not fall apart like some low-carb wraps.  I love the shape which makes them easy to load and great size for a personal pizza.  They have several flavors in the light and all low carb 6-8 net carbs and high in fiber and protein.  I know how Doug feels about cow food but for a quick snack, dinner or lunch these are pretty good.

Tonight I made a pizza using the Italian light flatout with Walden Farms 0 sugar, 0 carbs, 0 calorie marinara sauce, some sliced black olives, sliced fresh mushrooms, pepperoni and hand grated mozzarella cheese.  Bake the flatout slightly oiled with olive oil at 350 degrees directly on the rack for 7 minutes then remove and top with your sauce and toppings and bake for another 7 minutes.  Amazing, crispy crust pizza and very filling.

Hi FTS friends:

Been missing you all and hoped everyone had a great Christmas and will have a very happy and successful New Year!

I'm maintaining a size 8 with a little holiday indulgence but know it will come right off.  Ate a little more than I should ya know. lol  That has been my biggest challenge, discipline.  I thought I had it licked but with the stress of my new job and holidays, the SF candies and SF pumpkin pudding became my companions more often than they should have.  Portion control, Izze, portion control! lol  I need to find better ways to handle stress...it's just cards...it's just cards. lol

I hope everyone is doing well on your healthy journey and I hope to be on here a bit more now that things have calmed down some.  I will be on the road a great deal each week but more quality time at home.

I saw pumpkin custard but this is more like pudding and no egg. I hope you like it. I am completely addicted...at least until winter is over. lol



1 Pkg Cream Cheese or Neufchatel Cheese (lower fat)
1 15 oz can of Libby's pure pumpkin
30 drops FAT TO SKINNY Zero Sweetener
1 Tbls Pumpkin Pie spice
splash of heavy whipping cream

Soften cream cheese and beat/whip ingredients together until smooth and creamy.  I put it on the highest setting after it is all mixed.  Chill in the fridge until firm.  Spoon out like pudding and top with SF whipped cream and sprinkle a little pumpkin pie spice on top. You can also throw in some nuts in the pudding or on top for a variation.

I need an answer pretty quick if anyone is around right now.  Will the starch from the potato in a crock pot simmering with the corned beef and cabbage add carbs?

Product Reviews / Sensato High Fiber Hot Cereal

Just received my Sensato High Fiber Hot Cereal (hubby has now banned me from ordering any more low carb items from netrition for the rest of the month! lol).  The Vanilla Almond, Butter Pecan, and Apple Cinnamon are all very good for what they are.  Not the same texture as oatmeal more like cream of wheat and a little pasty/grainy because of the high fiber but tasty and a nice option for hot cereal and all only 1 net carb per serving except the Apple Cinnamon is 2 net carbs.  The serving size is very filling!  We can't expect to get the same texture on low carb.

Shihtzumom1 recommended them to me and since I had been a very avid oatmeal and cream of wheat eater this was a nice breakfast substitute.

Desserts and Sweets / Umpa's Easy Custard-Water bath

Easy baked custard with nutmeg.



Cook Time: 40 minutes
Total Time: 40 minutes
Ingredients:
•2 cups whipping cream
•2 eggs
•1/8 teaspoon salt
•6 drops FAT TO SKINNY Zero Sweetener
•nutmeg

Preparation:
Beat together milk, eggs, salt, and sweetener. Pour into custard cups; place cups in a pan with hot water nearly to top of custard line. Sprinkle each with nutmeg and bake at 325° for about 40 to 55 minutes, until custard is set. This really depends on depth of the baking dish. A knife inserted in center should come out clean. Makes 4 to 6, depending on size.

I'm in the process of moving actual recipes to the recipe sections so if you can't find it here check the recipes.  It is going to take a little time as I have to read through each thread to see if there is an actual converted recipe.  If it's not, the posted question will remain in Ask Umpa unless Umpa tells me different. lol

Reading all these recipes is making me hungry..time for lunch! lol

Breakfast Recipes / One Minute Muffins as Pancakes

1 Minute Muffin Batter as Pancakes
(taken from original post in breads-page 4)

I just used the original recipe  (Shihtzumom1)

Melt 1 T butter in a coffee cup or 1 cup Pyrex measuring cup.
.   Mix in ¼ cup  golden flaxseed meal
.   ½ tsp baking powder (stir this into the flax seed meal gently with a fork)
.   1 egg
.   Sweetener (to personal taste): 1 tsp xylitol
.   A splash of heavy cream
Give it all a really good stir with a fork to be sure it is mixed together smoothly.
Spoon in onto a hot griddle or frying pan sprayed with Pam (I had to spread it around with the spoon because it didn't pour).
When the top looked almost cooked I flipped it and cooked the other side.  
They raised up nice and fluffy.  
Serve with butter & SF syrup.
