Lunch Recipes / Lunch Idea-Chicken Salad on GG Crisps

Ok I know this isn't really a "recipe" but it turned out to be a very tasty little lunch.  I just received my sample of GG Crips today so I wanted to try them.  I thought this would make a quick, light and healthy lunch for the office and keep you full for a while because of the fiber.

1 Canned chicken in water
2 GG Crips
2 Slices of tomato
Fresh Dill
Dukes Mayo to consistency desired

Mix up the chicken, mayo, pepper and fresh dill.  Cut two slices of tomato and place on two GG crisps. Top with Chicken salad.

Variation: You could also add a slice of cheese on top of the tomato and toast to melt the cheese then add the chicken salad.  Play with spices such as turmeric, etc. to change the flavor of the chicken salad.

I just found a natural diet soda made with stevia and erythritol, in the health food section of the grocery store, called Zevia that is quite tasty.  It tastes much better than the commercial diet drinks and they use natural ingredients.  $4.99 for a six pack or $.89 per can.  They have several flavors to choose from so I plan to try one each time I go to pick up my almond milk.  ;D

Ok folks....drum roll please....my total fat loss for my 1st week on my low carb/sugar lifestyle is.....

6.5 lbs

Yes, that is correct....6.5 lbs of that horrible fat is gone from my body.  I have also seen improvement in my emotional and mental state...I've been in a good mood for a week (trust me that's amazing for me lol) and I feel more energetic. :D  I've also been getting better sleep which of course helps with weight loss as well.  I'm still taking my 1 oz of organic pure goji juice every morning even though it costs me 4 carbs.  To me it's worth it for the nutritional benefits.  I'm also still taking my Raw Greens supplement for 1 carb as well and my vitamins, fish oil, etc.

When I hit the 5 lb mark my husband came in with a 5lb bag of something and asked me to hold it.  I said, "ok, what's this for?"  He said, "this is how much fat and weight you've lost."  It really sunk in then, the accomplishment of that much fat being gone from my body.  I'm like...WOW and I started smiling.  It gave me that visual just like Doug's visual with the sugar in his interviews.  Visuals are a wonderful thing when you are dealing with abstract or unseen objects.  It makes it real...very real.

I am so encouraged to keep going just for the change in emotional and energy levels.  

I am trying a new recipe tonight. Spaghetti squash with a low sugar tomatoe sauce. Spaghetti squash takes the place of angle hair pasta-4 carbs 1/2 cup. It really took some looking to find a low carb sauce...5 net carbs per 1/2 cup is as low as I could find with no added sugar (Bove's all natural basil pasta sauce, gluten free, no preservatives, and no added sugar about $5.00) It better be good sauce.  This is about 1/2 of my daily carbs just for this dinner so I will not be fixing it very often but it's an option for spaghetti.

General Discussion / Telling everyone I meet about the book

Picture this...me...standing in the grocery line...some one strikes up a conversation and it's about some of the food I was buying....I tell one lady about the book and how I'm doing, reading labels, etc. and another lady asks what we were talking about so I tell her...people are taking out any paper they can find to write down the name of the book and author....I feel like I'm spreading the gospel of healthy eating. lol


I saw some people that were overweight and I wanted run up to them and to shout NOOOOOO put that sugary snack back!  Do you know what you're doing to your body with that weapon? lol  I would tell someone you require training to use any weapon and sugar is a deadly weapon thus you should be educated before you can use it. lol

Other than it's 1 carb is there anything in here I shouldn't be consuming?  It has sprouts including beans.

I received my book today...YEAH!  Lots of foods that I didn't know I could eat so I'm happy about that.  Recipes look delicious, however, it would be great if they had a net carb count per serving so that I could, at a glance, see what I could have based on my count at that point.  I could just look and see...hey I've got 8 carbs left what can I fix for lunch and dinner?   ;D

Umpa, sorry for asking a few silly questions that were in the book.  I have highlighted and tabbed the information I need to stick to this.  Happy to see I can have a little bubbly once in a while...don't want to make a habit of it. lol

Two days and I've lost 5lbs!  I'm so motivated and excited.  Thanks for writing the book...so simple to understand.

General Discussion / 1st day and already messed up with an apple

Ok...I had a brain wreck about calculating net carbs on my first day today.  For some reason I divided my total carbs by 4.2 .... I realized later that calculation is to get how many tsp of sugar. lol

I went to almost 30 carb grams today because of an apple...those darn apples just like in the Bible...the devil tempted me with it! lol  I had no idea it had so many carbs...13.5 after you minus the fiber.

Oh well...tomorrow is another day!

General Questions / Sugar Free Gum/Ice Breaker Mints?

I have some Trident sugar free gum and Ice Breaker mints.  Obviously it has alcohols and sugar substitutes.  Is it allowed as long as I count the carbs in my totals?  The both say about <5 cal. per piece.

It says 1 gram of sugar alcohol for the Trident.

The mints say <1g of sugar alcohol.
