Hi Umpa,  I was wondering how you decide which flours to use in your recipes?  I am thinking about some of the recipes that I make in the fall and during the holiday and wondering how will I know whether to use almond, soy, or flax.  With your brownie recipe that is in the bakery book can soy flour be used?  Any information you could share would be very helpful.

Also,  I do a lot of canning and was wondering how you would go about sweetening jam?

Hi there everyone, it has been awhile since I have been on the forum let alone posted.  Well it is official, I have reached my goal and feel great!  So, here is my story.  Back in December 2010, I was overweight, having heart issues, and not liking myself much.  My cardiologist told me to ride a stationery bike to try and get my heart regulated.  I went home and thought about it for a month. Then I bought one and rode it at least 30 minutes a day, 5 days a week.  But I was still having problems with a racing heart and fatigue. After a vacation I never seemed to get back on my bike.  In March, my Mom heard Doug on the radio, and called suggesting I check into FTS.  The next day I went and bought the book, read it, and my life changed.  The journey has not been as difficult as I originally thought, although I did have some very frustrating plateaus that lasted for weeks.  There were times that I wondered if it was worth not eating some of the things that I have enjoyed.  But I am here to tell you it is worth it.  I feel great and look good.  I even look nice in a bikini again.  My tummy is flat and I lost 5 inches off each thigh!!!  I mow my lawns, (haven't done that in years) been painting, and busy all the time.  But besides all that the cardiologist has released me from his care.  I have been at my goal for a couple of weeks, and have eaten a few things that I probably shouldn't have. Only because I found that then I want it more. Now I will still eat the same for the most part but would like to add some more fruits for a little variety.  The best advice I can give those of you who are still journeying to your goal is... Don't give up.  The sense of accomplishment you feel when you reach your goal is amazing because you did it for yourself.  You are the only one who will truly benefit from all you have endured both physically and mentally.   It IS worth it.  ;)

Weight Loss Stalled! WHY? / Definetly feeling bummed

Hi everyone, it has been awhile since I have posted but I have lived the FTS lifestyle 100%.  I am getting depressed...okay so I am depressed.  My weight loss has been at a stand still for quite awhile.  I have been very active but nothing is happening.  I had thought by now I would have reached my goal or at least been real close.  I feel like I have as much weight to lose now as when I first started.  You know the feeling I am talking about?  Like you have this goal but it is so far away you feel like you will never get there.  I have gotten many people started on the lifestyle and I am very supportive to them, but I feel very alone.  I am sure that sounds goofy but it is how I feel.  My husband makes comments that he can't wait until I am done with this, he doesn't seem to get that I intend to pretty much eat the same as I do now when I reach my goal.  I am sorry, I guess I just had to have a pity party and have no where else to vent.  This is not my normal demeanor so please don't judge me by this post.  I just needed to express how I am feeling.

Sides and Snacks / Zucchini Bake

This is my recipe and it is too good not to share.

Enjoy!

Zucchini Bake                                                   Preheat oven to 350 degrees

2 zucchini squash, peeled and cubed (I like to use some crookneck squash (yellow) with it too)
2 eggs, beaten
1/4 cup unsweetened almond milk
1 teas. baking powder
1/4 teas. xantham gum
1/2 lb. cheese, cubed
1/4 cup onion, diced
1/4 cup green peppers, diced

Cook squash in a small amount of boiling water until almost tender (about 5 mins.), drain and let cool.  Combine eggs, almond milk, baking powder, xantham gum, cheese, onion, and peppers.  Stir in squash.  Bake in a greased 8x8 casserole dish for 35 minutes, let stand for 10 minutes before serving.

General Discussion / I need HELP with my chocolate!!!!

I made chocolate almond clusters today...sounds yummy doesn't it?  They are except...the chocolate is gritty from the xylitol :(  I melted the chocolate in a double broiler, then added the xylitol and stirred, and stirred then added heavy cream and stirred more.  Is this recipe just gritty or have I done something wrong?  I had intended to make some candies for Easter.

Any help would be appreciated ;)

I was just a the store looking at things for my vegetable garden when I came across Stevia Plants in the herb section.  I was wondering if anyone knows how you would use it?  ??? Umpa have you seen or used this?  I thought I would check before I got some.

General Discussion / Is it Normal?

I rarely use the word "normal" because I seldom fall in to that category...but I am wondering if it is normal for a person's weight loss to slow way down and even stop when you are just getting going?  I have been living the life style for 6 weeks. (kinda thought I would have done better) I was just wondering because it seems everyone has lost a lot more weight before they slow down or stop.

I get discouraged sometimes because I get bored with what I am eating.  Sometimes nothing that I can eat sounds good.  So I get frustrated.  Okay I am done with my rant. :-[

General Discussion / Headaches

For the last week I have been getting headaches daily.  I know I am way past detoxing, so I am confused as to what might be causing them.  I don't drink a lot of diet soda, maybe just one a day.

I was wondering if anyone has experienced this or if anyone has a idea as to why? 

I have had migraines in the past and headaches but these are different, they are not bad just very annoying!

General Discussion / Returned from Vacation

I am back home after being away for a week.  I am pleased to say I stayed on the FTS lifestyle the entire time. 

One day when it was pretty warm everyone got a waffle cone with rocky road ice cream, (which happens to be one of my favorite kinds)
but I got a diet Dr Pepper.  ;D

My weight stayed the same but I lost inches.  So to me that is a good thing.  Now that I am home I can eat when I am hungry and drink more water. 

I also found out that Carl's Junior has a low carb hamburger on the menu! Woo Hoo :D

I just wanted to wish all of you a great week ;)

I will be leaving tomorrow on vacation and won't be able to visit the forum ( let the withdrawals begin :'( ) for a week.  I have my snacks packed and I am determined to stay away from all high carb foods!  I am sure I will be getting enough exercise!

The next time I sign in you all should be a bit skinnier and hopefully I will be too!

To all the newbies it gets easier with each passing day!!! :)
