Suzlyn451 posted this thread http://www.fattoskinny.net/index.php?topic=4528.0  and mentioned the Parmesan Cheese Crisp.  They are great and make a wonderful cracker for tuna/chicken salad.  1/8 of Parmesan cheese, microwave for 45 seconds!  Store in Ziploc in fridge!

Andrea, Cucumbers sound great.

In Arkansas  :) we slice cucumbers, purple or white onions, salt & pepper, vinegar and water.  They keep in fridge for quite some time and get better as they marinate!

Stuffed buffalo chicken breast
I am trying these tonight (changing the Ritz crackers to pork rinds and leaving carrots out).  I get Laughing Cow recipes via email.  I love their cheese wedges! Pictures later!  http://www.skinnytaste.com/2012/07/stuffed-buffalo-chicken-breasts.html

Ingredients:
•   1/4 cup shredded cheddar
•   4 wedges light Laughing Cow blue cheese
•   1/3 cup celery stalk, minced
•   1/4 cup green onion, minced
•   1/4 cup carrot, minced (delete)
•   salt and pepper, to taste
•   5 (3 oz each) thin boneless chicken breasts cutlets
•   15 reduced fat Ritz Crackers, crushed into crumbs (crushed pork rinds)
•   1 tbsp light mayonnaise
•   6 tbsp Franks hot sauce
•   1 tbsp lemon juice
•   2 tsp light butter
•   1/2 tsp garlic powder
•   cooking spray  

Directions:
Preheat the oven to 400°F. Lightly spray a baking dish with oil.
Mix cheddar, laughing cow cheese, celery, green onion, carrot, salt and pepper in a dish.
Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.

In one bowl make a breading station out of crushed ritz crumbs. In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture.

Roll chicken breasts in the mayonnaise mixture, then into cracker crumbs, and put on a lightly greased pan, seam side down
Lightly spray top of chicken with cooking spray. Bake 30 minutes. While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder. Drizzle buffalo sauce over finished chicken breast and serve.

Glad you enjoyed them.  I used butter instead of the coconut oil in a batch and the only issue I had was they crumbled.  Taste was still good!

I found this cookie recipe (can't remember the ladies name to give her credit!) when searching for my favorite sugar free chocolate chips Nevada Manna.  These cookies have the texture of a "real cookie" and have become a favorite at our house. 
Chocolate Chip Cookie
½ cup coconut oil (melt)
¾ cup Splenda, xylitol or Zero (36 drops)
1 Tbsp Splenda brown sugar blend
1 tsp vanilla
1 egg
 ½ cup NOW almond flour
½ cup Bakesquick or Carbquik baking mix
½ tsp baking soda
¼ tsp salt
Fold in ½ cup Nevada Manna sugar free chocolate chips and ½ cup nuts (if desired)
Spoon dough on parchment lined baking sheet and bake 12-13 minutes 350 oven.  Makes about 2 doz small cookies approximately 2 carbs per cookie.

Made this last night with Cauli Rice, very good!  It was my first time to make the cauli rice and it was yum! Husband didn't care for the rice but is not a fan of cauliflower.  The coating/breading on the chicken pieces was great.   :)
