Ask Umpa / Jalapeno dessert sauce - can you help Umpa?

A few months back I had a flourless chocolate cake in a restaurant and it came with a jalapeno sauce to drizzle over the cake. It sounds weird but it was exquisite. The chef at the restaurant isn't willing to share so I am on the hunt to figure it out for myself.

The posts about the flourless mug cake made me think about that sauce. I have been searching the Internet the past few days for a jalapeno sauce to use over chocolate cake but all the recipes are either jalapeno "jelly," mixed with some kind of fruit, or made with ingredients like onions to pour over meat.

The jalapeno sauce at that restaurant wasn't sweet; the sweetness in the cake was enough. It was a thin sauce - made for dipping the cake into or drizzling over it. It was shocking to me how awesome the mix of jalapeno and chocolate is. I could put jalapenos in the cake itself but that wouldn't be the same.

Also, I would LOVE to make that cake with the sauce on the side and freak a few people out when I tell them afterward that their elegant dessert was actually a low carb recipe!

Any ideas?

I bought Stevita flavored stevia crystals a while ago and tried mixing it with water to make a "fruity" drink. I really didn't care for the taste and almost threw them out. I have the orange, lime, cherry, strawberry and grape flavors.

Well, I didn't want to waste the money I spent on them so I tried mixing a little bit into my nonfat, plain Greek yogurt and it's delicious!

The Chiobani brand of Greek yogurt has 7 carbs so this is a dessert treat for me. I think the tartness of the plain yogurt masks the bitterness in the Stevita.

You don't need much to flavor the yogurt - maybe a teaspoon and it's great. I'm so happy that I was able to "fruit flavor" my yogurt with Stevia.

You can Google the crystals and there are a lot of online sources to purchase from.

This is really good with pork rinds. I use the mild jalapenos. One time I accidentally bought the hot ones and while I love hot food - beware! The hot version will make you pay the next morning!

1 (4 oz) can diced jalapeno peppers
1 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese
1/2 cup mayo
1/2 cup sour cream
1 (4 oz) can chopped green chiles

Preheat oven to 350 degrees. Spray a pie dish with Pam and put dip into pan. Bake for 30 minutes.

The original recipe calls for you to put it into a sourdough bread loaf but, of course, I don't do that. This dip tastes like jalapeno poppers.

I was brainwashed for so many years believing the low-fat diet garbage. I never had a weight problem until my mid-forties when I hit menopause. I gained 60 pounds, ended up with type II diabetes and was miserable. I tried Weight Watchers and all the popular "diets" and never dropped more than 3-5 pounds.

A year ago my father passed away and due to stress my blood sugar was out of control. I freaked out and read a book on diabetes and started low carb - not to lose weight; but to get my blood sugar down. To my surprise, I dropped 23 pounds fairly fast. I moved out of state, long story, and had a really stressful year. Although I didn't stick to low carb perfectly during the past year, I did NOT gain that 23 pounds back. Well, I am pulling my life back together to start over in the state I live in now and again, blood sugar out of control. I found this site and it's helping me tremendously. I bought Doug's book and downloaded the cookbooks. I have lost 7 pounds in the past two weeks and I figure I have at least 30 more pounds to go.

One thing I really appreciate about this site is the recipes for vegetables. When I eat low carb it's SO easy to just eat meat and cheese and forget the veggies but veggies bring my blood sugar down. The side dish recipes here sound really good and it's what I need to make sure I get them into my diet every day. I am really feeling motivated and hope to get the type II diabetes under control along with going back to my normal weight.

This recipe is one of my favorites. The palm hearts have a natural tang to them. I love this as a side dish with a medium-rare filet mignon.

Take a can of palm hearts (can be found next to artichoke hearts in grocery store), open it and pour the liquid into a saucepan. Chop the palm hearts into bite sized pieces and add to liquid in saucepan. Heat them up. While heating them, make this sauce to pour over the heated palm hearts:

I don't measure this; I just eyeball it and make it to taste:

Mayonnaise
Sour cream
Lemon juice
Curry powder

You don't need a lot of this for the palm hearts. I use it sparingly and mix it up so that the palm hearts are just lightly coated. A chef in a French restaurant used to make this for me. After they closed that restaurant down I had to figure out how to make it myself. This is the closest I could get to the way that chef's version used to taste like.
