Thanks for the tips! i will re-try them this weekend. I really enjoyed the aroma that wafted through the house as they were baking and really really want them to be something that i can bake every weekend!

Thanks for sharing Umpa. I have been struggling , actually have been eating ALL the wrong things. I needed to read information like that to get me back on the right track. I have noticed that in this time "off of the wagon" I have been super stressed and making poor choices. I also noticed that even though my time "off the wagon"  has only been 14-16 days, I can already feel the difference my old eating habits cause in my body...not just weight issues, but clarity of mind as well. So i am now even more determined to make the lifestyle change and eat a low carb diet!

I also ground my pork rinds and then measured... Perhaps my math is what went wrong when making them. Am I correct to measure 5 oz as 1/2 cup + 1/8 cup?

Are they supposed to be really soft and a bit gooey?
IF so, that isn't what I was craving, so I was really disappointed in them.
I did wonder if I made them wrong. So in reviewing the recipe, I have to ask...when it says to use 5 oz ground pork rinds, does that mean to use a 5 oz package of pork rind, crushed or as i did 1/2 cup + 1/8 cup of a 3oz package of pork rinds, crushed????

Any advise ?

Thanks for this list! I am still learning what is okay to eat. The list is a great tool for me to take when I go shopping, so that when I am tempted, I can look at the list and say , "Nope! not on the list!"

Just took my first attempt at making these out of the oven. I have to say that the delightful aroma alone is well worth the effort! If they taste half as good as they smell, oh my!
I also have some of the Walden Farm caramel dip to spread over the top. My mouth is watering as I type!
Umpa, I hope to get the bakery book in the near future!

I cannot wait to print this recipe off and try them! I have to admit, I wasn't too sure about  using pork rind, but after all teh positive comments, i am going to make them tonight!

I would love to know if there is a recipe out there that I could make when I am craving my favorite cookie, Oatmeal raisin. I have been craving them recently.

I've read the package for my powder splenda...it says 0 carb per packet... does it add up if you use more than one? If so How do i know how to calculate that???

These sound really good. My daughter begs for corn dogs every time we go past the deli counter in the grocery store. If I could make these at home and they taste as good...Oh we BOTH would be happy! Is there a carb count on them?

So happy to see this post! Just this week I made little smokies for my son's wedding reception. I ate a small portion, but was getting over the # of carbs.
