Sandipp, it is often difficult for a diabetic to lose weight at a fast pace, especially if your blood sugar is out of control. I know for myself, if my sugars are high at the start of a diet, I lose a few pounds in water the first several days. Then it takes several weeks to begin losing more as my blood sugar stabilizes. Keep at it. It will happen for you. :)

I roasted a chicken for dinner last night and used the leftover pan juices to saute some zucchini noodles. It was SO good, so simple and fresh! I think I've found my new favorite thing. I ate it too quick to take a pic. Next time I make it I'll get one to post.

Spicy Zoodles
2 zucchini, cut or spiraled into noodles
1 minced clove garlic
Fresh cracked pepper to taste
Crushed red pepper to taste
Thyme to taste
About 4 Tbsp juices from roasted chicken or chicken stock

Throw everything in a pan and Saute for 2-3 minutes until zoodles are slightly tender.

Yum!

Oooh corned beef hash. I'm drooling over here!  :-)

The jicama was fresh, I just didn't really like something with the texture of it raw. I will try something I don't like a second time though. Sometimes all you need is to fix things a different way and then you find you love it.

Is it the jicama that makes it gummy? Never cooked with it before. I've had it raw and did not care for it but I'd like to try this.
