Ask Umpa / Substitute for Macaroni Salad???

Several of us were discussing foods we grew up on, but haven't had in years...  One of my childhood memories was of my aunt's tuna macaroni salad (with PEAS!!). 

Anyone have a substitute for cold macaroni other than cauliflower?  (We like cauli potatoes, but not a fan of cauli potato salad).  Would toufu (never had) work for a cold pasta?

“BAKED” Bacon

Maybe you all know about "bakun" your bacon, but I have never tried it.  Figured it couldn’t be any messier than frying on stove top or on an electric griddle.  Wow!  No bacon grease on the countertop, backsplash, window, stove top or floor to clean up!  I baked enough bacon for: tomorrow’s chicken/bacon/ranch pizza; DH's favorite BLT dip, and several breakfasts (will freeze).   A real time saver for me…

Directions:

Temperature:  400.  One method says to put bacon in a cold oven, another says to preheat to 400.  I did both – the only difference I found was it cooked quicker with preheating…

Foil - Crumple/wad-up foil and then unfold the foil so it is wavy, then put on baking sheet and arrange the bacon on it. This gives the fat somewhere to go so the bacon isn't sitting in the fat as it cooks. This method also shapes the bacon while bakun.

Close oven door and come back 17 to 20 minutes later. As soon as the bacon is golden brown, but not excessively crisp, it's done. The exact time will depend on the thickness of the bacon slices, your preference to crispness, and also on how quickly your oven reaches the target temperature.
Remove the pan from the oven. Transfer the bacon to another sheet pan lined with paper towels to absorb the fat.

Tips:

Keep your eye on the bacon during the final few minutes of cooking to make sure that it doesn't burn. Also, remove the cooked bacon from the hot pan right away. The heat from the pan and the hot bacon fat will continue cooking the bacon.

You can slightly undercook the bacon, then cool it and freeze it in a zip bag. Then, to reheat, cook two slices in the microwave on medium power for 30 seconds or so.

General Discussion / "Pulled Spam" Sandwich

I've never been a fan of Spam no matter how it was fixed, but  the "boys" in the family like it.  While updating my "hurricane box" (hurricane season started last week and runs for 6 mos), I came across a can and decided to fix for the oldest boy in the family - DH.

I shredded the spam, sliced some onion, added some Walden Farms BBQ sauce and cooked 'till onions were soft.  Put some "pulled Spam" in a Joseph's pita pocket and topped with coleslaw.  DH loved it, and I didn't think it was too bad - I think the coleslaw and BBQ sauce helped distract me.  ;D

The spam had 6 carbs for the can, pita pocket = 2, BBQ = 0; coleslaw (recipe on FTS recipe board) = 1.  We got 4 "Pulled Spam" sandwiches out of this for under 5 carbs.   Certainly not a yummy Park Ave pulled pork sandwich, but it sure is lower in carbs!!   (I've also thrown in shredded cheese, mayo and cream cheese and made a dip out of the spam.)

Sooo simple!!!  Mine didn't taste too much like blackberries (probably lost a lot of its flavor coming all the way from Mexico  :D), so I crushed some fresh berries and put on top - yummy!

We have a special needs son who cannot have dairy (doc wants him on goat milk/yogurt), so I made him blueberry ice cream using goat milk instead of the heavy cream.  Goat milk isn't thick, so I added xanthum gum until it thickened up.  Tastes pretty good, and I saved a ton of money - a half gallon of goat milk ice cream is $28.00  :o  :o

For those of you who cannot tolerate dairy, maybe a low carb ice cream using almond milk instead of the cream might work for you...

I buy Shirtaki noodles at Publix and Whole Food - cheaper at Whole Food ($1.99 bag).    The smell is pretty darn bad, so 30 min. before I fix them, I rinse, rinse, rinse, then soak 20 min. in water, then rinse, rinse, rinse, and then I rub in garlic oil.  :)

I'm also still drinking the Braggs every day. 

Really had to "force" myself to drink it mixed with water and lemon (tasted medicinal), but I now put 2 tsp in 16 oz of Crystal Light Green Tea Raspberry or their Green Tea Peach Mango over ice (0 carbs). We were surprised that we actually like and look forward to this drink.  ;D ;D

Sides and Snacks / BLT Dip - Cold or Hot

I made some tortilla crackers (thanks for the recipe) found on this board, and made the following dip to go with them.  Also used celery sticks as dippers - yum... ;D ;D

1 pound bacon
1 cup mayo
1 cup sr. cream
1 tomato
onion & garlic powders if desired

Cook bacon, drain, crumble.  Combine mayo, sour cream and tomato - add bacon.  Refrigerate. (I will add cukes next time, as I like cukes on my BLT).  I didn't have any sour cream so I subbed cream cheese with a little heavy cream and a splash of vinegar - was tasty enough that DH didn't realize it wasn't the original recipe.

Another version is to add 8 oz cream cheese, 2 cups shredded cheese and bake 350 for 20 min.

Bet its even better the next day - unfortunately, there wasn't any left to back-up this statement... :( :( :D :D

8 oz unsweetened Silk Almond milk  =  0 carbs
1 coffee w/cream  =  1 carb

                          HUH?????!!!!!!!!!!!!!!!!!

*** Glucosamine-Chondroitin tablet = 2 carbs :o :o :o

I was shocked to the see the carbs in those vitamins!!!  Sheesh, we gotta watch everything that goes into the mouth, I guess!! ::) ::)

I agree - it doesn't smell appetizing! 

I rinse, rinse, rinse then rub between my hands several times under running water.  Then I leave the noodles in the strainer and let them sit in a bowl of fresh water.  My final step is to  drain then pour a little garlic oil on the noodles, then add to the sauce.  After all these steps, they don't smell and are tolerable... ;) ;)
