Breads and Crackers / Re: One Minute Muffin - OMG, Ya' Gotta Try!!
« on: August 25, 2010, 01:51:26 PM »
I just used this recipe to make a grilled turkey/bacon/cheese sandwich!

1 tsp butter, soft
1 egg
¼ cup flaxseed meal
½ tsp baking powder
½ tsp xylitol
1 tbsp heavy cream
A sprinkle of Parmesan
A couple pinches of salt

Mix ingredients together and pour into a square plastic container.  Microwave on high for 1 min 30 seconds.  Pop right out of the container, cool, and slice horizontally.  Lightly butter the outside of the bread pieces, add whatever meats/cheeses you want and grill it up!  YUMMMM!

The flaxseed definitely gives it a distinct taste, kinda like you are eating a very wheat-y wheat bread.  Salt & pepper definitely helped.  Next time I might add a dash of garlic salt or something.

General Discussion / Re: Smaps on Sale!

Actually...it looks like the stipulation is "one per customer per order".  But since there is free shipping on each Smaps order you have nothing to lose by doing multiple orders!  Smaps for all!

Hurray for all cold breakfast cereal lovers!  Dixie Diner has Smaps on sale for 50% WITH free shipping!  Normally over $12 a bag, they are on sale for $6.35 through 8/26.  Only one per person though but I'll take it!

Haha who doesn't love KY?!  I've had many a good times at Churchill Downs.

I used to live in Cinci area and I really wish we had Kroger in Chicago...

So, went to the store yesterday to get block cheeses with 0 carbs.  But every block I picked up still had 1g carbs per 1 oz serving.

Katary/all--are there any national brands of block cheese that you buy that have 0 carbs?  I love cheese and eat a lot of it but I certainly don't want to waste my precious carbs on it if I don't really have to.

Thanks :)

Ask Umpa / Powdered Xylitol?
« on: August 23, 2010, 10:50:40 AM »
Hi Umpa!

General FTS baking question for you and the forum.  If a recipe calls for powdered sugar/sweetener...do you still use granular ylitol?  Do they sell powdered xylitol?  Or can you somehow grind the granular xylitol into a powdered form?

Thanks!

Breads and Crackers / Re: Katary Bakery Sunflower Seed Crackers
« on: August 23, 2010, 10:47:59 AM »
Aww man...I bought a bag of sunflower seeds but they are still in the shells!  Dumb...

Anyone know a quick way to de-shell them en mass so I can make these crackers??   Or is it a lost cause?  Luckily they were only $1.50 a bag...

Ooooh that looks good Doug.  Wait, wouldn't the lettuce, tomatoes, and black soy beans be a 1 or 2 carbs?

Desserts and Sweets / Sweet & Spicy Cinnamon Roasted Nuts
« on: August 20, 2010, 04:22:15 PM »
Sweet & Spicy Cinnamon Roasted Almonds, Pecans, or Walnuts
Makes 2 cups

2 cups of almonds, pecans, or walnuts – roast each type of nut individually
2 tablespoons sugar free syrup or 6 Drps FTS ZERO
1 tablespoon grapeseed oil, canola oil, even coconut oil
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/4 teaspoon cayenne powder

Place a rack in the middle of your oven.  Preheat your oven to 350 degrees F.

Place nuts in a large bowl.  When you roast the nuts, roast each variety in separate glass or ceramic baking dishes as their roasting times vary slightly. You can put two dishes of nuts in the oven at once so long as they fit on the same middle rack.  If the nuts are too close to the heating element they’ll burn.

Combine syrup, oil, cinnamon, salt, and cayenne powder in small bowl.  Pour mixture over nuts and toss to coat completely.  Place nuts in a glass baking dish in a single layer.  Bake for 12 – 15 minutes, stirring after 6 minutes.  Test for doneness at 12 minutes.  Nuts will still be soft when done and get crispier as they cool.

Once removed from the oven, stir to toss nuts in any remaining cinnamon mix left in the pan.  Place on heavy duty aluminum foil to cool completely, separating nuts as much as possible so they don’t dry in clumps.

Almonds take a few more minutes to cook.  Since the almonds have no ridges to soak up the flavoring, you may need to add a little extra salt, cinnamon, or cayenne right after removing from the oven.

Other variations:
Try 1 1/2 teaspoons curry powder in place of the cinnamon and cayenne
Try coconut oil in place of the grapeseed/canola oil

These are a cinch to whip up but very addicting!  Remember portion control :)  2g carbs per 1/4 cup.

When Christmas rolls around I plan to make big batches of these mixed nuts and package them up as gifts in little tins or gift bags with pretty bows!  Getting a little ahead of myself but I love the holidays...:)

Wow, seriously can't wait to try this!

I have learned so much on this forum it's not even FUNNY.  Like the pre-shredded and sliced cheese containing potato starch!?  I always wondered where that 1g carb was coming from!

Gary--when you buy a big block of cheese and grate it yourself, can you grate a big bunch, put it in a plastic bag, and it will be good for a few days?  Or does it get mushy or sticky or something if you don't use it right away?

I'm willing to do my own grating, just trying to minimize the work!!  Laziness is my specialty.  I can't be alone here  ;)

Made it last night--it was really good!

Problem is I could probably eat 4 servings of the cauliflower...but portion control is part of this lifestyle too! :)
