Concern with Fat content

Hello friends,

I love the recipes and clever ideas for all the recipes, but I have always wondered whether the fat content was safe, for example I can make the shirataki without any meat and just veggies or some tofu curry, quiche and many more, a lot of them require cheese, butter, oil for frying and while I know having enough oil is definitely more easy to cook the food and more flavorable, I worry about the calories even if i use olive or canola oil and the fat adding up in cheese and butter or egg yolks. Any ideas anyone? Those can clog up our arteries and accumulate cholesterol on our bodies.

Can anyone also suggest which type of flour has the lowest carb count? I know there is soy flour, almond etc. but which one has the lowest carb anyone? I totally agree that cutting the hidden sugar absolutely works as I have tried very quickly and seen some results even in a day or so, I was thinking if the recipe has kind of a high fat count, shouldn't we also be concerned?  A little confused there as excess calories will pack up the pounds especially like me as I am not very active at all, or is there another solution...perhaps the sugar in our bodies are much more critical as opposed to the fat?? A bit confused there.

Hi Susan, I'll let Umpa (my wife) catch up to you on the lowest carb count flours however I'm pretty sure she'll start with Flax Seed Flour which I believe is a zero, then she'll probally hit the nut flours like almond meal and hazelnut meal next. We also make a zero carb flour out of Pork Rinds......which brings me to  your fat content question.

When I built the FAT TO SKINNY program I built it under the care of my heart doctor, take it from me...I understand clogged arteries and heart attacks, been their...done that. Check this link for what my doctors have to say- http://www.fattoskinny.com/reviews.htm  The truth is we clog up our arteries much faster with high triglycerides from high blood sugar than we could ever dream of doing from animal cholesterol, this was the cause of my heart attack. Now, all of my numbers are within normal range. I'm sure if you poke around the forum you'll find many others are as well. Following FTS you'll get a great variety of different fats including cheeses, meats, butter, olive oil, fish oil, coconut oil, dairy.....The old way of thinking was and still is for many that these are the culprits that are making us fat and killing us. WRONG, in moderation these are the foods that create the wonderful feelings of satisfaction and fullness that carry us all day long.

I want you to forget about counting calories and fat.....just count carbs as I've taught you and keep a good variety of fish, meats, poultry, tofu , veggies, nuts, seeds, fats etc.... as prescribed within the pages of FAT TO SKINNY. I've given you the proper balance within the program  8)

                        Another Californian finally ::) Hope you stick around.
           When I started the F2S my triglyceride's  reading was in the high 400's my last reading was @ 98 My A1C was 11.5 my last reading was 6.2 Good luck!
And if I claim to be a wise man. It surely means that I don't know... Kansas

welcome to the forum Kitties:) follow the book,with portion control you wont have "excess calories" and as Doug says there is plenty of variety here to allow for endless "healthy" meals,fat doesn't make you fat...sugar & over eating does:) please come back often and share your journey back to good health with the rest of the forum:)

Welcome kitties.I am umpa ,dougs wife.i have a column on the homepage called ask umpa where i can convert your favorite recipes to fat to skinny friendly.The lowest flour is flax because of its high fiber content.I like the nut flours and soy.To keep down the carb counts I like to cut my flours with soy protien powder which is also a zero.My favorite sweetner to bake with is xylitol.It is so good for children.For coffee and tea I like stevia.If I can help please ask. My bakery book will be out Oct.31 :)

Understand totally now about the fat content, but still I should watch how much I eat.
I do enjoy food, I am also Chinese so you would think Asian folks are generally slim.. to an extent it is generally true but I should get rid of my belly fat and around those areas after 26 years living in the US, I am thinking of converting some recipes to low carb, I love rice...guess it'll seriously need to be cauliflower rice from now on which I also love but I will be the only one having it so gotta be strong at staying with that, I love tofu, tofu cake/patties or any type of veggies stewed with sauce and I have been looking at some Indian veggie dishes so may consider some of their ideas.  I am not too heavy on meat except for seafood which I do not eat excessively as well, salmon and shrimp, sardines etc, but still overweight so apart from overeating sometimes it may very well be the overload on carbs.

Thank you for all the support, this is a great forum and if I address my issues here I believe I should be able to achieve what I want with all the feedback and support and encouragement. Tks again.

***I first thought Umpa was a cat's name (smile) *^_^*, it is so cute. Will check back often.

In the FAT TO SKINNY Cookbook pg# 156 there is a wonderful lo mein recipe.You can also make curry soup with unsweeted coconut milk.Its a zero in the can.The one they sell in the gallon container like the almond milk is a one. ;)

shirataki noodles...you can buy them in the produce section of the grocery store or online at  www.miraclenoodle.com or www.asianfoodgrocer.com.
