Zucchini Bread

This is my husband's favorite dessert.

Zucchini Bread (makes 1 loaf)

3/4 cup almond flour
1/4 cup plus 2 tablespoons coarsely chopped pork rinds
2 teaspoons cinnamon
1 teaspoon baking soda
1/8 teaspoon baking powder
3 eggs
¼ cup oil
1 1/2 teaspoons vanilla
32 drops FTS Zero
1 cup grated zucchini
1/2 cup chopped nuts of choice

Preheat oven to 350 degrees, grease a loaf pan.

Grind the pork rinds into a flour, stir in the remaining dry ingredients. In a separate bowl, beat the liquid ingredients with a fork. Beat in half of the dry ingredients until smooth, then the other half. Stir in the zucchini, then the nuts.

Spread in the pan and bake 30 to 45 minutes, until the center is set (depends on the size of the pan you use). Remove from pan at once to cool before slicing with a serrated knife. Keep Refrigerated. Freezes well.

Another wonderful bread recipe....who says we can't have bread!

I agree, Doug! :) :) :)

This recipe makes a nice sweet bread to have with cream cheese and coffee or tea.
