I've had Umpa's Beanit Butter Cups on my mind today.
Since stalling last month, the last thing I need is a full batch of PB cups sitting around the house taunting me. However, I couldn't stand it anymore so I mixed up a tablespoon of Beanit Butter with a tablespoon of Walden Farms Chocolate Syrup and 2 tablespoons of Smaps cereal. I dropped it from a teaspoon onto some waxed paper and stuck it in the fridge for awhile. Sort of like a No-Bake Cookie. They firmed up a little, but I didn't wait long enough to see how hard they would get. It was a bit of chewy, gooey, chocolatey, peanut buttery goodness.
The carb count was pretty low (I have the number on my other computer, but it was in the .20s I think) because I only used 2T of the cereal. The other ingredients had 0 carbs. I got 2 pieces out of it, but I could have gotten three. Kind of a high-calorie treat at 95. Not sure what Umpa's PB Cups are calorie-wise. But ... it took care of the craving for now.
