I need HELP with my chocolate!!!!
« on: April 20, 2011, 08:52:25 PM »
I made chocolate almond clusters today...sounds yummy doesn't it?  They are except...the chocolate is gritty from the xylitol :(  I melted the chocolate in a double broiler, then added the xylitol and stirred, and stirred then added heavy cream and stirred more.  Is this recipe just gritty or have I done something wrong?  I had intended to make some candies for Easter.

Any help would be appreciated ;)

Xylitol takes longer to melt than sugar. If your chocolate gets thick while trying just add boiling water in 2 tablespoon increments.Or you can melt it before adding to chocolate in heavy cream or water. ;) I usually let my ingredients get to room temperature before using them.If you add really cold cream or almond milk it tends to keep the xylitol firm.  ;)

Thanks, Umpa. Now that I think about it, ours was a tiny bit gritty too.

That's for sure. Even my kids loved them. The ladies at Rick's work are asking me to make them more.
