I was reading about coconut flour.  Is it really low carb?  I love coconut water, in Brazil we drink lots of it.  Can I use the flour instead soy or almond flour.  Also can I use liquid stevia instead powder?

Hi Dsmeral! :)

Coconut flour it's much higher in carbs than soy, flax, or almond flours.
I would not use it.

If you want coconut taste in something, add a little sugar free coconut extract.
What you do today is what matters!

You may use any sweetner you like but it should be 0 carbs.I use coconut milk in my baking,but I measure it.Bobs red mill coconut flour is listed at 4 carbs  for two tablespoons thats 32 carbs for a cup.Too high:)

I almost forgot I also like bobs red mill unsweetened coconut.i use it for coconut cream pie and macaroons ;)
