Joanne's Coconut Shrimp

COCONUT SHRIMP

1/2 lb raw peeled shrimp(about 22 shrimp)
Marinate in 1/2 cup of unsweetened almond milk(.5 carbs) that you add coconut extract to
Overnight is best but a couple of hours works
Grind up some unflavored pork rinds (I use a rolling pin to crush them in a Ziploc bag)
Add 6 TBSP unsweetened coconut (3 carbs) to the ground pork rinds
Add the Shrimp ,but not the marinade, and shake
Ovens vary, but bake @ 350 degrees for approx 15 minutes on a cookie sheet sprayed with olive oil.

Serves 2 for a total of 3.5 carbs if I have done the calculating correctly

If you can find SF Apricot Jam and heat it up to melt, it makes for a nice dipping sauce

I've made it before and it's delish!

I really like Joanne's marinating idea!
Marinating the shrimp overnight should really make the shrimp "POP" with coconut flavor!
I'm gonna make her version later this week!... I can't wait!!! ;D
