ROSIE'S MOCK POTATO SALAD

I MADE A DELICIOUS CAULIFLOWER SALAD TODAY, USING MY MOM'S POTATO SALAD RECIPE. IT IS SO GOOD!

1     12 OUNCE BAG FROZEN CAULIFLOWER ( OR FRESH) 20 NET CARBS ENTIRE BAG.
3      BOILED EGGS sliced ( SET ONE ASIDE FOR LATTER) my eggs come from Kroger and they say 0 carb.
2      STALKS OF CELERY, DICED UP   3 NET CARB.
3 T.  DILL RELISH
1/4   CUP MAYO
DRIED ONION TO TASTE
SALT & PEPPER TO TASTE
PAPRIKA

Cook Cauliflower,drain, place in food processor and mash.   Place cauliflower in bowl, add 2 sliced boiled eggs,dill relish, celery,mayo, salt, pepper, onion, stir up.
Smooth up top, than slice the last egg and place neatly on top of the salad, sprinkle with paprika and chill.
Absolutely delicious ;D

Kfaith that sounds good  !! gonna have to try it  My bag is only 10 net carbs .

It is good, we just had it for supper,  hubby gave it a 7 on a scale of 1-10,  he says nothing can compare to 'real' potato salad but he liked it.

Sounds good!  We use to love potato salad.  Your recipe is similar to the one I use to make with potatoes instead of the cauliflower.

Have you tried mashing only half the cauliflower and simply cubing the 2nd half and adding it into the salad?
I think that might provide a more realistic "potato salad" experience.
Just a thought. 8)

That sounds like a great idea! I agree, it would probably really make you think that you were eating potatoe salad  ;)

My mom always mashed her potato salad but kinda a lumpy mashed.  But yes either way sounds yum to me.
