Low Carb Spaghetti Pie

LOW CARB BAKED SPAGHETTI PIE

1 lb ground beef
˝ c chopped onion   7 c
1 jar spaghetti sauce  10 – 24 c
1 c cottage cheese   6 c
˝ c. shredded mozzarella

***PIE CRUST***

2 bags sharitake tofu angel hair spaghetti   4 c
2 T. butter
1/3 c grated parmesan cheese
2 eggs, beaten

1)    Rinse, Rinse, Rinse and drain angel hair – I rinse 5-6 times then put in a bowl of water for 20 min or until the sauce mixture is ready.

2) Brown ground beef, onion and garlic – drain.  Stir in spaghetti sauce and any spices you may like:  garlic, Italian seasonings, red pepper, etc.   Heat through.

3)       Add butter and cheese to well drained angel hair and heat in microwave till hot – add beaten eggs and stir well.  Spoon angel hair mixture into a buttered pie plate to form a pie crust – although it will not be firm like a real pie crust.  Spread cottage cheese over the noodle pie crust (I used ricotta diluted with some of the sauce to make it spreadable). 

4)      Next, pour the ground beef/sauce mixture over the cottage cheese.  Bake 20 min @ 350, sprinkle mozzarella cheese over the pie and bake till cheese melts, approx 5 min.

My six-serving spaghetti pie equaled 31 carbs total, or approx. 5.5 carbs per slice.  Carbs will vary depending on the sauce and  veggies used.  I had a very low carb sauce – Lucini Creamy Tomato Ricotta Sauce from Whole Foods  (I think it was 10 carbs for the whole jar).  Teamed the pie up w/coleslaw (used to have a tossed salad with spaghetti, but the slaw only had 1.5 carbs), and  a slice of garlic-cheese bread made with Joseph’s Lavash bread (1 carb).  Very filling and a nice change.  Think I will try an alfredo sauce-chicken-zucchini pie next time…  NOTE:  I was going to freeze some of the pie, but I found a site that said not to freeze the noodles as they turn out rubbery.

  when I tried them the were already very rubbery...  :-\  do you think maybe I prepaired them wrong?  I'm kinda afraid to try them again...LOL  I just couldn't get past the feel of chewing on a rubber band.  I wonder if mine had maybe been frozen before I bought them at the store... hmmmm

Sounds yummy!  Gonna have to try it...  Toosweet - try to find the Miracle Noodles or yam noodles instead.  They are a little rubbery, but nothing like the tofu ones!

Toosweet if you tried the fetachini  noodles they are not good to us either we could not even keep them in our mouth for a second BLAH  :P

I get grossed out even thinking about them , But the thin noodles were pretty good need to rinse & rinse then rinse again . I am Italian so when I need my pasta it gets me over the pasta craving . ;D

Thanks Jen I will try that.... so far all I have seen in the store is the tofu ones.  I guess I should order some and see if I like them better. 

Jo it was the spaghetti ones that I had tried.   I rinsed them really well and threw them in a pan with butter to heat them up.  Maybe I didn't cook them enough????  I don't know   I really like the zucchini noodles though so I haven't been really missing pasta.

Hiya Romarc! :) Great recipe!Gotta try this one!
You can do a quick boil with the soy noodles.We have gone totally over to the konjac yam root pasta products. :)

I'm not a fan of the tofu noodles - gotta cover those little squirmers up with LOTS of sauce!!  ;D ;D DH tolerates them and actually kinda likes them...

Umpa, how do the yam noodles compare?  The texture?  The Taste?  The carbs/fiber?  Where to buy?

I just ordered them all from the asian grocer online.When i am get back from San Francisco i am going to be reviewing them all.Thats what they sell in the asian store here.So if you live where there is a asian grocery store they will have them. I love the texture of the yam root (Konjac) products .Miracle noodle makes a orzo that is great.Their rice is mushy though.I bought the cakes and everything.The Konjac noodle themselves are superior to tofu or soy  products.I work with alot of gals here on the forum that are breast cancer survivors and they can't eat soy,so its a great replacement.i think I will be able to use the cakes to make dimsum or ravioli.Wait for my review before you buy anything but the noodles or orzo ;)

You do realize that Asian Food Grocer is located in San Francisco.

I don't know if they sell direct to the public at their location.
But it's worth a shot if you want to have some FTS-friendly noodles while in Frisco.

All the asian markets in Chinatown carry them.I love chinatown! We were in Little italy last night and I can't wait to get home so I can try to make cannolli!I think I can do it! :) I think doug is gonna have to buy a suitcase to take home all the stuff i bought though! :D
