I was having a little pity party this morning and someone sent that to my email. I decided maybe I should quit grousing about not losing weight and not being able to eat any of the goodies with the rest of you without gaining.

I've seen Nick a number of times on TV and once on the 700 Club program.
There are few people on this planet that are as inspiring.

He truly understands and lives the truth that EACH of us are precious and beautiful in God's eyes.
And the Lord has given each of us a purpose in His will.

When each of us comes to accept this truth, we'll understand what Nick really means when he says;
"Motivation gets you through the day, but inspiration lasts a lifetime."
What you do today is what matters!

You are not the only one there...  ;)  some of us are just very sensitive to those carbs.   I think I have become the queen of maintaining...LOL  I always start dropping the weight again when I just keep it simple and watch my portions.  For me it is going to be best to save the sweets and baked goodies for after I reach my goal.   :-\   That includes the one minute muffins...LOL  or a least keep them at no more than a few times a week.  :P :P  Hang in there.....follow the FTS rules and you will get there  ;) ;)

Thank you for the sympathy, Shawn. I was feeling very frustrated this morning - that's because I made a coconut cake cup cake yesterday and ATE IT and this morning the scales were up - and this is after not eating anything except meat and veggies for two months and not losing an ounce. Lots of factors weigh in. I know the deal. Wah wah wah wah!

Tony, sometimes it seems like people with the greatest handicaps are the greatest inspirations! I've been blessed to know some REAL giving, generous and patient people and it makes me ashamed of myself when I'm greedy, stingy and impatient, which I am a lot. sigh

Oh Sarah...I understand :) I too am very sensitive to carbs. Try some of my recipes with sweet sauces on top. I especially like the sweet lemon sauce I make for fish and Avocado, give you your meal and dessert all at the same time!  ;)

2 teaspoons lemon juice
4 teaspoons water
1 packet Stevia


Heat the liquid to warm, stir in the Stevia and serve over desired foods

Thanks, Doug! It sounds a lot like the lemonade I make - except I use more water! I'm back on top today after taking a deep breath and getting things back into perspective.

Speaking of lemonade - I finally got around to trying my hand at craisins. I used 1 cup water and 1/2 cup xylitol and boiled it until the xylitol dissolved, then added the cranberries, already washed and cut in half. Soak for '30 minutes' so the recipe says. I let them soak for several hours so they might suck up more sweetener. They're still a little tart, but this looks like a winner to me. Oh, the lemonade... saved the liquid from soaking the cranberries to mix with lemon juice and water for cranberry lemonade.
