Low Carb Apple Wood Smoked Turkey Breast with Coleslaw

Apple Wood Smoked Turkey Breast with Coleslaw



Ingredients  

   1 turkey breast, 6–8 pounds
   2 tablespoons Montreal steak seasoning
   4 cups apple wood smoking chips
   ½ head green cabbage (4 cups shredded) (1.5 net carbs per ½ cup)
   ¼ cup finely chopped onion (2.5 net carbs)
   3 tablespoons zero-carb Italian dressing
   2 tablespoons mayonnaise
   1 teaspoon celery seed
   Salt and pepper


Directions

1.   Make sure the turkey breast is completely thawed prior to placing it in the smoker. Coat the breast with a good coating of any brand Montreal steak seasoning and place it on the rack in the smoker. Add the smoking chips. Follow the manufacturer’s instructions for per-pound cooking times and walk away. It will take 3½ to 5 hours to smoke the turkey.
2.    Good coleslaw is best after it has time to rest, so it’s a good time to make it now. Chop the cabbage to your personally desired consistency. I like it roughly chopped, but many people like it chopped more finely; it’s your choice. Add the onion to the cabbage.
3.   For the dressing, combine the Italian dressing, mayonnaise, and celery seed and stir into the cabbage mix. Salt and pepper to taste and let it rest while your turkey smokes.
4.   You’ll want to let the turkey rest 15 minutes before carving to give the juices a chance to solidify. That rule also goes for all the poultry and roasts. If not, the juices will simply run out and you’ll have a dry finished product.

  TIP- Oh, how I love the weekends! For me the weekend screams smoked foods and BBQs. If you’ve never smoked food before you’re in for a real treat. Don’t be shy now . . . smoking food is a very easy and enjoyable experience. Don’t have a smoker? Live in a condo or city apartment and have no place for an outdoor smoker? No problem, there are several good indoor smokers on the market that can be used on the stovetop or even in the oven. Personally, I like my MECO 5029 electric water smoker. This model is stainless steel so it will last for years. You can pick it up at Amazon.com for about $250. It’s electric, so you simply put in the soaked wood chips, fill the water pan, put in the food, turn it on, and walk away.
