rutabaga or yucca
« on: February 02, 2012, 05:39:33 PM »
Does anyone have any good ideas for rutabaga or yucca? I am looking through the cookbook but also like all your recipes. I sit here trying to get good ideas as my husband watches (every night) dives diners and drive-ins. And yes he is skinny, UGH.. Loves me fat he says but I dont. lol

Check the carbs for the roots you bought and measure when using. Both are high but can be used in roasted veggie dishes with lower carb veggies if you  really want them. ;)

Thanks but I will pass if it is high in carbs. I am learning to eat very small amounts of carbs and I will keep it that way. Besides behind my house is a preserve and I am sure they would like the roots.  Thanks again

sweeties, yucca is extremely high in carbs and the sugar spike is horrible....I love yucca, expecially since I am of Cuban descent...but I dont miss the sugar hikes and the sluggish feeling..how Imiss my tostones too... :'(
