Lunch in the office.
« on: May 28, 2010, 12:54:45 PM »
I wanted to post my first recipe.

        Lunch in the office!
first off I stopped and picked up zucchini and some very low carb salsa this morning, before work.
At work I have a cutting block and a pocket knife. Scissors I use for food only.  Small corning ware bowl to cook it all in.
I started by cutting the zucchini (small one) up with my pocket knife to make my zucchini pasta. I was very slow and hard to get it small like pasta so i ended up using the scissors. Very easy that way.
I placed the z-pasta in the bowl then added 4oz of chicken and 2 table spoons
salsa 1 Carb per 2 tbl spoons . Then way to much garlic. No one will talk to me now. Hold on I'm almost done I then added 1oz cheddar sharp popped it in the counter top stove and broiled it for 12 minutes. Four simple ingredient's! Then bon appetit!
Now my belly hurts . I think I ate to much. ;D

OK here's the scoop on my test results. Dummy me couldn't wait or remember my pass word and ended up getting locked out from my email account from my Dr. So now I get to wait till my NEW pass word arrives in the mail.  :-[ Monday or Tuesday. My Dr. called me and told me my A1C had dropped from 9. something to 7 she said that was almost in optimal range. The rest will be posted ASAP
