potato skins

i have just seen a recipe for a snack...oven bake  3 potatoes and cut them in quarters..scoop out the middle..put them on baking sheet spray with a little oil...place back in oven cook for thirty minutes... put chopped chives in a bowl...with sour cream and salt and pepper....is this low carb...as you're not eating the potato just the skins...xx

You know Bev,I don't think there is alot of flavor unless you restuff them.Doug says there are carbs.Maybe stuffed cabbage leaves would be a better choice.

 ??? it was shown as a sort of crisp/chip and dip thingy instead of chips/fries and cheese....it looked nice sort of an alternative..but if its not low carb..!!..xx

You could cut up a low carb tortilla and bake the pieces.
