Frittata

Ingredients
1 tablespoon butter
8 large eggs (8 net carbs)
1 1/2 cups shredded Fontina cheese
2 tablespoons grated Parmesan or Romano cheese
1/4 cup chopped tomato (1.5 net carbs)
1/4 cup chopped scallions (1 net carb)
1 package Konjac noodles (2 net carbs)
Salt and pepper to taste
Directions
1. Preheat your oven to 350 degrees.
2. Place a cast iron skillet on your stove top on med/low heat.
3. Using a hand or stand mixer beat the eggs, 1 tablespoon grated Parmesan or Romano cheese and salt and pepper to your liking, (about 1/2 teaspoon of each should do)
4. Open you noodles and rinse 3 or 4 times well, pat dry with a paper towel.
5. Using a fork mix the noodles, half of your chopped scallions and Fontina cheese into the egg mixture.
6. Melt the butter in the cast iron skillet, making sure to coat all sides and bottom of pan.
7. Give the egg/noodle mixture a good stir and slowly pour it into the skillet. Spread the noodle out evenly with your fork.
8. Remove the pan from the stove top and place into your pre-heated oven.
9. Bake the Frittata for approximately 45 minutes or until the center has puffed up and is firm to the touch.
10. Remove pan from oven (careful, the handles HOT ask me how I know that )
11. Using a butter knife slice the Frittata quiche the same way you’d slice a pizza.
12. Using a pie slice spatula remove the slices.
13. Sprinkle chopped onion, chopped tomato and grated Parmesan or Romano cheese over the slices and serve.
TIP- Konjac noodles are made from Chinese yam root and are VERY low in carbs. They are sold in many oriental supermarkets as well as under the brand names Miracle Noodles and House Foods Shirataki Noodles .
