Almond Apple Spice Muffins??

I ran across this recipe and was curious what others thoughts were on it any comments would be helpful trying to figure how to make it lower carb

Almond Apple Spice Muffins

These low-carb, high-protein muffins use unsweetened apple sauce and almond meal to cut down on added sugars and excess carbs. They're extremely portable and convenient if you're on the go and deliver less than 10 grams of carbohydrates per muffin.

Ingredients:
2 cups almond meal
5 scoops vanilla protein powder
4 whole eggs
1 cup unsweetened apple sauce
1/2 stick butter
1 TBSP cinnamon
1 tsp all spice
1 tsp cloves

Directions: Preheat oven to 350 degrees. Melt butter in microwave (~30 seconds on low heat). Throughly mix all the ingredients in a bowl. Spray muffin tin with non stick cooking spray or use cup cake liners. Pour mix into muffin tins, make sure not to over fill (~3/4 full); this should make 12 muffins (2 muffin trays). Place one tray in the oven and cook for 12 minutes. Make sure not to overcook as the muffins will become very dry. Once cooked remove from the oven and cook the second muffin tray.

Servings: 6 (2 muffins/serving)

I have modified the OMM to call these my spice muffins
See what you think

4 Tbl melted butter

3 eggs
3 Tbl heavy whipping cream
3 Tbl Torani SF Brown Sugar Cinnamon syrup
1 Tbl Vanilla extract
2 Tbl Mayo

1/4 and 1/8 cup golden flax
1/4 and 1/8 cup almond flour
1/4 cup carb quick
4 Tbl Xylitol (I don't have FTS sweetener yet)
1 1/2 tsp baking powder
1 tsp cinnamon
2 tsp apple pie spice

Preheat oven to 350.  Melt butter.  Mix wet ingredients, add melted butter.  Mix dry ingredients and add to first mixture.  Pour into muffin cups (makes 12).  I bake both muffin trays at the same time (side by side).  Bake for 20-25 minutes or until toothpick comes out clean.  Very moist.  Serve with whipped topping or low carb ice cream.  Refrigerate and or freeze.

Great recipe Suz ;) Tex make sure your protein powder is a zero.Use unblanched almond flour (4 carbs per cup)or  make your own.The purpose of the applesauce is moisture which you can get from mayo or coconut oil.There are apple flavorings and emulsions you can buy.Suz's recipe is a good one. ;)

Thanks Umpa..this is one of our favs.  Hubby doesn't like just flax flour so I have experimented with mixture of them.  Of course, almond flour and carb quick make them a little higher carb but great texture.  I use mayo in all my OMM conversions to make them moist, especially anything chocolate.  I am thinking that the camper oven may have to be fired off this morning...need something for Memorial day dinner.

With my old camper I had a hard time keeping a constant temperature in the oven so i bought a oven thermometer for baking.Cooking was fine,but baking was tricky.I always had to set it alittle higher than I needed it. I finally started using my toaster oven with the single serving bakers.That worked ok.My new camper is suppose to be a little better. :)
