Substitute for Almond Milk

Hi umpa  - low carb or 0 carb almond milk is impossible to buy here (so far), is it ok to substitute the LC milk (made up from powder) in your recipes?  or cream diluted with water?

Morgan,
Since Umpa's away, I'll jump in and say that, of your two choices, I'd go with watered down cream and you should do fine.

Andrea's solution works, Morgan.
When I run out of almond milk, I'll dilute heavy cream with water.

Just add the water s-l-o-w-l-y and taste as you go.
Too much water will make it yucky. :P
What you do today is what matters!
