I love soup, but don't make it nearly as much as I used to. I've been craving it lately, so I came up with this very simple recipe, if you could even call it that. I imagine you could put whatever you wanted into it. The carb count is about 1.2, depending on the size/amount of celery you use.
SOUPER SPICY SOUP FOR ONE
1 chicken tender
1 chicken bouillon cube
1 small celery stalk, chopped
Tabasco sauce
salt & pepper to taste
boiling water
Cook chicken in microwave for 2 minutes -- 1 minute on each side, and then chop well. Put chicken, bouillon cube, celery, Tabasco, and salt and pepper into a soup mug. Add boiling water and mix well.
I like mine REALLY spicy, so I add a lot of Tabasco. Rick saw how much I put in today and his mouth dropped open. HA! This is also good to eat with hot & spicy pork rinds. I miss that soup & crackers combo, so sometimes I'll drop a pork rind into the soup and scoop it out with some liquid. Only do one pork rind at a time though because they dissolve pretty quick. I suppose you could try this with Miracle Noodles, if you like those, but I don't. I also use the BIGGEST mug I have to make this. It's a quick and easy way to warm up on a chilly day!
