Author Topic: Sausage, Cheese, and Mushroom Omelet w/ Sour cream and Salsa  (Read 6649 times)

1/2 c Egg Beaters (or 2 eggs)
1-2 slices of portabella mushrooms
2 Jimmy Dean sausage patties
1/4 c shredded mozzarella cheese
1 tsp of heavy cream
1-2 tbsp sour cream
1-2 tbsp salsa (I like medium/hot)
pat of butter (enough to cover bottom of pan)
black pepper (optional)

Pour Egg Beaters and heavy cream in bowl and whisk. Chopped the mushrooms and mix in the egg mixture. Take one pan and cook your sausage patties thoroughly and set aside. Take another pan and melt the butter. Pour egg mixture and let it cook until you see the egg fluff. Add cheese and black pepper throughout omelet, and put sausage on one side. On the other side flip to cover sausage. Get a plate and flip omelet to your plate. Add sour cream and salsa.

I'm horrible at making omelets, so I decided to make this into a scramble today. Instead of using store bought salsa, I made my own. It was delicious!! Never thought to eat sour cream with eggs. The kids loved it (without mushroom, of course), and asked for seconds. This will definitely be in my rotation of meals.

ItsOverSugar...im glad you like it!!  ;D Key think to making a perfect omelet is 1) Make sure your pan is large enough for the egg to spread and 2) make sure you put enough butter to coat the bottom of pan and 3) Don't be afraid to take it off the heat if egg is cooking too fast. .. and Im gonna need the kids to eat some mushrooms...lol j/k Im glad you liked it though.

Good tips! Next time I make this, I'll try them. Yeah, I need my kids to eat mushrooms too! They like veggies, but some I just cannot get them to eat no matter what. I have little cavemen who would only eat meat if I let them. So I use a lot of (sneaky) ways to get them to eat their veggies, and it usually works except for the ones they think are super yuck .. like broccoli, cauliflower, mushrooms. It just doesn't work! LOL One of these days, I'll trick them for sure! ;D

Omelets are easy if you use the correct pan, heat settings and plenty of butter :)
