Casserole Question

Hi Umpa,

There is a casserole that I want to make and it has a base crust thingy on the bottom that includes 2 cups biscuit mix (bisquick?).  Do you have a suggestion on what I could do instead?  It says to mix according to the box with water to make a dough and press on the bottom of the pan.

I cut and pasted this from a post for chicken pot pie.  In that recipe it goes on the top but I've made it and it would work on the bottom.  It is like a thick cake batter so you might need to add the toppings carefully or use less liquid.

Put 3 eggs in a bowl and beat them. Add to the eggs: 1 cup of almond meal, ½ tsp of cream of tartar, ½ tsp of baking powder, and ¼ cup of heavy cream.

Umpa will most likely have suggestions but she's probably out fishing while I'm at my desk working.

Here is one that will work too

Low carb master baking mix

2 cups soy isolate powder or soy flour (I like to use unblanched almond flour for lower carb count or a mix)
1/2 tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon soda
1 tablespoon shortening, cut in and mix well (you shouldn't have any visible chunks of shortening)

Store in the fridge or freezer until needed.  Use as you would Bisquick.   ;)

Those fish are groupers, right?

They look a lot like a fish local around here... Ling Cod (a VERY tasty fish!)
Lings live in rock crevices. And some get quite big (20-30 pounds).

Sounds exactly like grouper when you dive they are in the ledges . Today is bass fishin and your fish pie! :)
