Those of us in the South love the Pimento Cheese I just recently discovered this product that is made in Pawleys Island SC.  It is so good and low in carbs.  Here is a recipe that I think would be the closest to what they make  ;)  You have to spice it up though to give it a kick!!

1 (8 ounce) package cream cheese, softened - (mine says 1 for 1 oz) so 8
 2 cups shredded extra-sharp Cheddar cheese (use the large shred not fine) -0
 1/3 cup mayonnaise -0
 1 pinch garlic powder
 1 (4 ounce) jar diced pimentos, drained -2

about 10 net carbs for the whole recipe


 Directions
1. Beat the cream cheese at medium speed with an electric mixer until creamy; add Cheddar cheese and continue beating until light and fluffy. Beat in mayonnaise and garlic powder; stir in pimento. Cover and chill for at least 1 hour.

I would add some cayenne pepper and some jalapenos.... That would give it the kick it needs   Also it says to beat the cheddar but I would just fold that in or maybe just beat a small portion in and then fold the remaining in.  You want to have the cheese in whole shredded pieces not just a creamy mush.  This would be real close to the one I really love to get at the store.  I haven't tried to make it myself yet but will next time I run out.   Hope everyone enjoys it!!

Ok so this is awesome on so many things!!  Tonight I had some left over rotisserie chicken.  You know how chicken can dry out a bit.  I put about 2 Tbs of this on top and warmed it in the micro.....WOW was it ever good!!! :D :D  Just wanted to share  ;)

I'm not sure what brought this recipe up but I'm not from the south so I'd only heard of the pimento cheese in the little glasses next to "Old English" cheese.  My grocery store didn't have pimento so I bought red peppers in brine and chopped them up.  I hope that wasn't a big no-no in the pimento cheese world.

It was hard to leave the mixture long enough to let the flavors blend, but this is delicious.  I'm using celery sticks to get it from the bowl to my mouth.

I think this was toosweet  :) I made it too and boy was it yummy! I think pimentos are red pepper,aren't they?

Yep!... They are large heart-shaped sweet (no heat) red pepper.

I'll have to experiment with variations.  I'm afraid this is going to be popular with my husband.  That's good and bad!
