What do you take for breakfast & lunch? :)

I fry eggs and bacon the night before and eat "breakfast" usually at lunch time..... then at 5 or 6 pm I will eat chicken , steak , salad with protein. Its all about being prepared. Beings I am a nurse we work 12~13hour shifts so I need to be prepared at all times. As far as snacks I bring cheese sticks or almonds , sugar free jello.

Hi Thinisin! :)

Eggs are good reheated... The only exceptions may be sunny side up or over easy eggs.
The yolks will harden with reheating.

How do you make your fried eggs?

I thought fried eggs have the yolk still intact, like sunny side up, but fried. Another idea is my favorite Egg salad. It keeps for a few days too & you don't reheat. :)

Sunny side up or over easy fried eggs typically have liquid yolks.
I often enjoy these on Sunday mornings with fried bacon and an OMM.
They may be cooked longer if you want solid yolks.

I will reheat scrambled eggs and omelets.
They're both good if reheated but not so long as to dry them out.

I fry my eggs well done with yolk completely cooked. I sometimes will cook for 3 days and even by my 3rd twelve hour shift they are completely fine reheated. I also do scrambled eggs with peppers and mushrooms and some cheese. : )

Souffles are too. I just let them get to room temperature ;)
