Low Carb Sesame Ginger Chicken Salad
Servings- 2
Ingredients
1 1/2 cups cooked leftover chicken breast, chopped into small pieces
1/4 cup chopped celery (.4 net carbs)
1/2 cup mayonnaise
1 small tomato, wedged (3 net carbs)
2 cups salad greens (2 net carbs)
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 tablespoon sesame oil
1 teaspoon black or white sesame seeds 1/4 teaspoon ground ginger
cracked black pepper and salt
Directions
1. Mix the chopped chicken, mayo, celery and salt and pepper to taste together in a bowl and set aside.
2. Spread your salad greens and tomato on two dinner plates.
3. Whisk the vinegar, oils and ginger together in a small bowl.
4. Sprinkle the dressing over the greens.
5. Place 1/2 of the chicken salad on each plate.
6. Crack black pepper over the plates and lightly salt.
7. Decorate each plate with sprinkled sesame seeds and serve.
TIP- Having extra chicken salad, or tuna or turkey salad in the fridge is a great way to make a fast fulfilling lunch
