Lemon Squares
Crust Ingredients
1 cup Now brand un-blanched almond flour
1/8th cup Xylitol or 6 drops FAT TO SKINNY ZERO sweetener
½ cup butter
Filling Ingredients
4 large eggs
1/3rd cup key lime juice or lemon juice
24 drops FAT TO SKINNY ZERO sweetener
¼ cup Now brand un-blanched almond flour
1 teaspoon baking powder
Crust Directions
1. Preheat oven to 350
2. Combine almond flour and sweetener in a large bowl.
3. Cut in butter until mixture is well mixed and looks like crumbs..
4. Press firmly into greased 9 x 9 square inch pan.
5. Bake in 350°F oven for about 20 minutes until golden brown. Remove from oven.
Filling Directions
6. Beat eggs in large bowl until frothy, add juice and stir well.
7. Combine ZERO, flour and baking powder in small bowl.
8. Add to egg mixture and stir until just moistened.
9. Spread evenly over crust.
10. Bake for about 25 minutes until set.
11. Cool completely on wire rack then transfer to refrigerator to cool further before cutting. Cuts into 48 squares
TIP- The colder the better when cutting. To avoid filling run off let set completely in refrigerator.
