Veggie Ideas please!

Some friends at work gave me a huge bag of Roma tomatoes and six gigantic yellow bell peppers and three bags of mixed salad made with the tomatoes and peppers already in them. They were left over from a big event they had. They also gave me a huge ziplock full of fettuccini Alfredo and 24 choc chip cookies but those belong to the teenagers and other carb loving eaters in my houseful at the moment. We have four of my six kids with us for the summer and I'm struggling to feed everyone! I didn't have problems feeding them all when they were younger but now there are two teens and two that are 7 & 10. I'm tired but I can afford to keep eating out. So with this gift of food I am happy to get creative. :) I'm thinking maybe tuna stuffed peppers and i can make homemade tomato sauce from the tomatoes? I have a dehydrator so I may have to get it out! I'm also harvesting all my little peaches from my dwarf peach tree. I wonder if I should cut them up and dry them for the kids to eat or are they acceptable to make a SF jam out of? I love the berry jam recipe in the FTS book (I've made three batches now and put it on my own homemade version of Bran Crispbread). So perhaps it might work for peaches too? I have so many little peaches I can't get the kids to eat them fast enough!

Any other ideas?

Oh yeah and I've got to find a hot dog bun recipe that's good. Anyone use coconut flour here? I find that mixed with almond meal makes a nice smooth and soft bread texture for quick reads but haven't tried any rolls yet...

Hi Michelle, dry the peaches for the kids...too high in carbs for you. The mixed salad will go south fast so enjoy creative salads for a couple of days.

1- Chefs salad with meats cheeses and hard boiled egg

2- Salad with a nice scoop of Tuna Fish salad in the center

3- Taco Salad, southwestern spiced ground beef or ground chicken in the center of the salad, shredded cheddar all over the top of the hot meat, surround the outside with hot and spicy pork rinds for the "chips" or toast up some lavash bread and crack it up.

4- Oriental Shrimp Salad with a seseme oil and vinegar dressing, sunflower seeds, and sesame seeds

1- YES! Make some homemade pasta sauce with tomatoes and peppers, freezes great! Use pint size zip lock bags for easy portion control.

2- I LOVE Peppers and eggs for breakfast, butter melted in the pan..then chopped peppers till wilted, then scramble in the eggs!

3- Roasted peppers in olive oil....very easy, heat up the grill to high, split the peppers and remove the seeds then flatten, coat with olive oil and salt and pepper then grill, don't be afraid to partially blacken some lines into the peppers, really adds to the flavor. Let cool completely then stuff into a jar and pour in the olive oil, refrigerate. As you eat the peppers gradually start using the remaining oil for cooking or salad dressings...YUM!

4- Here's a wonderful fresh Pico De Gallo recipe, I made blackened fish the other day and wanted Pico on top but we didn't have any fresh cilantro in the garden...BUT we did have plenty of mint... I simply chopped onion, mint and fresh tomato, salt and pepper....It was delicious on top of the spicy fish...give that one a try!

5- Can't go wrong with stuffed peppers but I would cut them in half. You say they are huge so split them and go Italian. Ground hot sausage mixed with chopped onion and a bit of egg white and garlic. spoon on some of your homemade pasta sauce, fill the halves and roast. You can even freeze these raw wrapped in plastic wrap for a quick easy meal in the future.

Feeding teenagers (especially boys) is a costly proposition... I remember it well!
Finding creative ways to stretch the food budget is a must!

I just checked.Coconut Flour ranges between 3-4 carbs for 2 Tablespoons.Gotta check the serving sizes.I assumed it was a cup.I do see how it could change the texture though. ;)

Coconut flour behaves differently than the other flours that we use, in that you will use far less of it and add more liquid and eggs when baking.  That is why it is talked about as a low carb substitute even though it seems to be way higher than the others.  It took me awhile to figure that one out.  It does add a nice texture to baking breads and cakes but the protein powders do as well   without adding the extra carbs  ;)  I like to mix it in to give it a more smooth or cakey feel so to speak   :)

Cool. Thanks, TooSweet and Umpa! I did notice that you can put a TB or two if coconut flour to about 3-4x as much almond flour and add more egg and it doubles the flour volume. It's yellow though so it gives the quick bread I made with it a look and texture of almost lemon pound cake. It wouldn't be hard to make it into that! The bread I made had 12 slices at 1.5 carbs each slice. It wasn't bad for texture either. It made a really great sandwich. :) Ill keep experimenting!

I will have to try the coconut flour if I can find one low enough.Its all about finding what works for you  ;)TooSweet how is the vacation going?

So far so good Umpa  ;)  We are taking a rest day from all the unpacking and such..Haha  I'm getting ready to take my niece to look for low carb things she can find in her area.  Fun shopping  ;D
