Low Carb Fried Fish and Baked Stuffed Eggplant
Ingredients
Fish Filets (pictured is large Mouth Bass)
Ground hot and spicy pork rinds
beaten egg
peanut or veggie oil
Tarter Sauce (ground dill pickle and Mayo)
egg plant
1/4 cup chopped bell peppers
1 tablespoon chopped red onion
3/4 cup shredded mozzarella cheese
1/4 cup low carb pasta sauce
salt and pepper to taste
Directions
1- Preheat your oven to 350
2- Cut the eggplant in half lengh wise and scoop out the center of the halves making a boat
3- Chop the scooped out eggplant and mix in a bowl with the pasts sauce, onion, pepper and cheese
4- Place the filling into the boat and bake on a cookie sheet for 30 minutes or until fork tender.
5- When the eggplant is done shut off oven and leave inside with the door cracked
6- Heat your fry oil to 385 degrees
7- Dredge the fish in beaten egg then in the ground pork rinds
8- Fry both sides to a golden brown and serve with tarter sauce and your eggplant.
