Parmesan Galore!

I LOVE Parmesan dishes and I've gotten very creative with them over the years. They are simple to make and delicious. You can use many different protein or veggie sources for your main dish including;

Veal, Chicken, Pork, Turkey, Fish, Tofu, Eggplant, Zucchini, Green Tomatoes even Boca Burgers.

The art of Parmesan is a simple matter of flash pan frying a thin piece of food coated or non coated in olive oil until it's crispy, light brown and cooked through.  If you decide to coat it a simple ground pork rind flour after an egg wash of the food works well. While the food is frying turn on your broiler to medium/high heat.  The next step is to place the cooked food onto a cookie sheet and top with a couple of tablespoons of your favorite low sugar pasta sauce (room temp or heated) and your favorite "melty gooey stringy" cheese. My two fav's are mozzarella or aged provalone. I have been guilty though of using hot and spicy cheeses when making Mexican Parmesan :)

Place the cookie sheet under the broiler and watch it closely, the intention here is only to melt the cheese.

Now put that ooey, gooey goodness on a plate and side it with Shiritaki, or, Macaphoney, or Cheesy Broccoli and Manga Manga!

Another idea is Spaghetti Parm.  Prepare your Shirataki noodles as you normally would and toss in your sauce, add a few veggies if you like, put in an oven proof dish and cover with generous amount of mozzarella and/or provolone cheese and broil.  There is a restaurant in Buffalo, NY called Chefs and Spaghetti Parm is their house specialty (have you been there SherriPie?).  A while ago I had thought about trying it with the Shirataki noodles and then forgot about it.  Thanks for the reminder Doug, I think it will be on the menu some time this week.

They're good and the cheapest I could find.
Of course, Amazon.com also has them. But I could not find cheaper (including shipping).

I buy them 10 at a time for cheaper per unit shipping.
If your order is <= $25.00, shipping is FedEx Published Rate (based on weight).
If your order is > $25.00, shipping is $6.95.
If > $100.00, free shipping.

AsianFoodGrocer.com also has the tofu kind (I really don't like tofu).

One other thing to remember, during the winter months, the packages could freeze and burst during shipment.  :o :o
That's why I'll buy mine from Spring thru Fall with a large order in Fall for the Winter months.

Umpa made a nice pot of sauce yesterday from fresh tomatoes. Time for Eggplant Parmesan!
