Tonight we're hosting a dinner party for some friends of ours who LOVE Italian food. We introduced them to FTS about 2 months ago and the couple has lost weight rapidly. He went from a 36 inch waist to s 31 and she went from a size 8 to a size 5.... needless to say they are both thrilled
Here's tonight's dinner plan;
Low Carb Pork Cacciatore with noodles Serves 4
Ingredients
2 bags Tofu Shirataki Noodles
2 large thick country style pork ribs
4 HOT Italian sausage BONUS!
1 large red bell pepper rough chopped
1 cup white button mushrooms rough chopped
1 medium onion rough chopped
3 cloves garlic diced
2 cups low carb tomato sauce (I'm using Classico brand, found it at Big Lots for a buck a can
3 net carbs per 1/4 cup)
1 tablespoon dried Italian seasoning
2 teaspoons fennel seeds (optional) I LOVE fennel
3 tablespoons fresh chopped parsley for topping at serving time
Salt and Papper
Grated Parmesan or Romano Cheese
Olive oil
Directions
1- Coat the bottom of large non stick skillet with olive oil
2- Cut the meat off the ribs, leave the fat on the meat, save the rib bones
3- Heat the pan over medium heat
4- Salt and pepper the pork well and pan fry along with the rib bones until golden brown, remove the meat from the pan and toss in the sausage.
5- Pan fry the sausage until browned and remove from pan.
6- Toss in all the chopped veggies, garlic and fennel and cook until veggies are softened.
7- Place all the meat, drippings and sauce along with the Italian seasoning back into the skillet, gently mix and cover.
8- Once the sauce starts to bubble reduce heat to low and cook for an hour and a half or until the pork is fork tender.
9- Rinse the noodles several times the pat dry with a paper towel
10- Using a ladle move all the meat and veggies aside and place the noodles in the pan, cover the noodles with sauce and cover. Let the entire pan rest for 10 minutes prior to serving.
11- Generously grind Parmesan or Romano cheese over the top of each plate and sprinkle chopped parsley over the top
