Here's an easy but very special dinner plate for Dad on Fathers day. It's really delicious and very filling
Low Carb Crab Meat Stuffed Salmon n' Spinach
Ingredients
1 very thick salmon filet
1/2 cup lump crabmeat
1 teaspoon chopped shallot
1 teaspoon chopped chives
1/2 teaspoon chopped garlic
1 egg white
1 1/2 teaspoon Cajun seasoning
2 cups fresh spinach
3 tablespoons Marzetti Chunky Blue Cheese Salad Dressing
3 tablespoons salted butter
salt and pepper
wedge of lemon
Directions
1- Preheat the oven to 450 degrees
2- Gently mix the crab, shallot, chives, garlic egg white and 1 teaspoon cajun seasoning
3- Using a sharp knife cut a pocket into the salmon filet and stuff in the crab mixture
4- Melt 2 tablespoons of butter in the microwave and coat the bottom of an individual baking dish
5- Pour out the extra butter into a small dish and place the stuffed fish into the baking dish, drizzle the butter over the fish then salt and pepper the filet.
6- Bake the fish for 30-35 minutes or until the fish starts to flake
7- 5 minutes prior to taking out the fish melt a tablespoon of butter in a skillet over medium heat
8- When the butter is sizzling toss in the spinach and saute until it's wilted. salt and pepper the spinach and plate
9- Add the remaining cajun seasoning to the blue cheese dressing and mix well
10- Plate the fish along side the spinach and the dip and garnish with lemon
