This is what I found about making potato flour
Peel, boil and mash potatoes,then spread them out on a dehydrator. Once dehydrated just run through a blender or flour/coffee mill.
And here is a recipe for "Jicama corn bread"
Jicama Corn Bread
Preheat oven 450
Peel Jicama(run Jicama under COLD water while you peel it, its easier to peel that way), cut into large chunks
Put into food processor til consistency of potatoes
Use cheese cloth or old shirt in strainer and squeeze out extra water
Mix together
1 cup jicama mash
.5 cup almond flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
Add two eggs
Add buttermilk a little at a time until just clumping like cookie dough batter (1/3 to 1/2 cup)
In a glass or cast iron pan, melt 1 tbl bacon grease or lard until almost smoking hot.
Pour in dough and spread evenly, bake 18-22 minutes. Good with butter / chili and can be toasted.
