Strawberry Cream Cheese Crepes
INGREDIENTS
2 eggs
2 teaspoons water
two tablespoons of new hope mills pancake & waffle mix
1 tablespoon of butter
½ cup fresh mashed strawberries
2 whole strawberries, quartered
4 oz of cream cheese
reddiwip topping
Crepes are very easy to make. They are simply very thin pancakes used to roll up a variety of ingredients. Preheat an 8-inch non-stick skillet over medium heat. Using a stick of butter, make sure the bottom of the pan and an inch or two up the sides is greased. Pour in a small amount of batter and, using the pan’s handle, lift and swirl the pan to spread the batter out thinly across the entire bottom of the pan. Cover pan for 60 seconds. Crepe should be set on top and can now be gently removed from pan onto a plate. Repeat the process, stacking the crepes on top of one another and separated with paper towels until you have made all the crepes you need.
