Low Carb Beef Jerky

I've been trying to find something that I can take in the car or on a trip that is high protein and won't melt like a protein bar and think I've found the answer...Beef Jerky!  I found this low carb recipe and I'm going to try it later this week.  

3lbs lean round steak (all fat and silver skin removed)

Marinade:
4tbls Sea Salt
1tsp onion powder
1tsp garlic
1tsp chili powder
1tsp pepper
1tsp cayenne
3 dashes liquid smoke
1/2 cup water

mix the spices and the smoke and water let sit
Slice the beef in 1/4 inch thick slices
Pour marinade over the meat and mix it up. Make sure it is all covered evenly. Let marinate at least 1 hour

Put it on the very lowest oven temperature (175-200), lay the jerky out on a rack set over a pan to catch the drips, and bake it for 3-4 hours until it's fully dried.

Alternate marinade (have to check carb count in these items)

¼ cup soy sauce
1 tbsp Worcestershire sauce
¼ tsp cayenne pepper
¼ tsp garlic powder
1 tsp seasoned salt (Lowry's, etc).
t tsp liquid smoke

I don't recall seeing that...I'll look for it.

Ok I found it in the book and in the videos but it seems to have higher carb ingredients...I'm sure it's delicious.  I'm going to try this version and give my report on it's taste-worthiness. lol ;)  Plus, I don't have and can't afford a dehydrator at this time.

I'm feeling much better ty for asking...still some minor pain in my neck/shoulders/arm while working but nothing like it was thank goodness.  Off the meds for a week but very discouraged I put on 6lbs....I wanted to cry this morning.  :'(  Trying very hard to limit my carbs but it's difficult with not much of a selection to eat except meat, eggs, chicken, etc. I have a spoiled pallet. lol  I can't exercise either since I can't lift or pull anything without worrying about aggravating my injury further.  Perhaps I just need to walk. ;) 

We drove to the mountains Saturday and walked a trail and I actually felt better, the pain eased, which surprised me.  It was beautiful and a nice cool breeze all day and evening.

I hope all is well with you and yours including the pups!

Hi Iz..I like a bit of sweet/heat in my jerky so I add Stevia, or xyltol...I also use Seal Sama sugar free Teriyaki sauce...love jerky!
