Lemon Pepper Chicken Saute

Made this up today!!

First I put chicken in crockpot in the morning-


Crockpot Chicken

26oz Swanson Cooking Stock 100% natural
1 stick butter
6 fresh chicken breasts
7 hours on low in crockpot

Then I made this. Mary liked it so much that she wants it again.

Lemon Pepper Chicken Saute
Mrs Dash Lemon Pepper
Saved the broth & butter mix
Put 1 cup in a pan
1 small cooked chicken breast, diced
2 cups shredded red cabbage
1/4 cup diced red bell pepper
1/4 cup oil

Put broth/butter mix in pan, add vegetables, cook vegetables 7 minutes or until tender.
Sprinkle lemon pepper on vegetables, add meat, sprinkle lemon pepper on chicken, add oil and mix in with vegetables. Saute 5 minutes.

Susie was the chicken in the crock pot a bit on the dry side? 7 hours seems like a long time  :o The second recipe looks wonderful!

Chicken was not dry, it was drowning in 1 stick butter & whole container of broth. Depending on how hot your crock pot is and it's size the time has to be adjusted though.

He's a good chef I know, so no crockpot cooking for him. I use it to keep house cool in summer and now with this crazy weather triple digits in October  :( , also when I'm really busy.

Crock pots do a wonderful job on recipes that should be cooked on low for a long time.

The best pulled pork I've ever tasted, I cook in a crock pot.
Crock pots are also great for stews, corned beef briskets, etc.

Pork is a cheaper meat but I never did a good job cooking it. Mary only likes highly seasoned pork. Any good ideas for cooking it in crock pot?
