For the  sake of space I will just post this question here. I was wondering about the sugar free/ low sugar enchilada sauce. Any suggestions?

It's all about reading labels. Because we all come from different parts of the country and even from other countries brands are different. We use Old El Paso which is only 3 carbs for 1/4 cup which should be enough for two enchiladas.

And how many carbs are the enchiladas? I have to take some type of insulin with my meals usually not much but still a bit.

That will depend on the wrap you use. We use La Tortlilla wraps, 3 carbs per wrap. We split them in half and only use 1/2 for each enchilada. 2 enchiladas go into individual baking dishes 1/8th of a cup of sauce per person 1 1/2 carbs. Quarter cup of onions mixed with the ground beef, total 2 1/2 carbs, 1 1/4 per person. no carbs in the meat or cheese. They are served on a lettuce bed with a bit of sour cream and avocado. 1 carb each. So here's the math per plate;

Wrap- 3
Sauce- 1.5
Onion- 1.25
condiments-1
Meat- 0
Cheese- 0
Bed of lettuce- 1/2 carb

TOTAL- 7 carbs for total dinner each

See how easy that was :)

So that's 2 servings per person correct? Isnt 7 carbs a lot?

That leaves 13 carbs for the rest of the day so lets say you had bacon and eggs for breakfast, 0 carbs....A cheeseburger wrapped in Lettuce for lunch....0 carbs.  Now, you've eaten dinner and only had 7 carbs for the day :) you know what that means don't you?? 

Carb Smart Ice Cream and Reddi Whip for dessert!!!

I guess the problem for me is I have to spread my carbs out thru the day more or I bottom out. I have to be so careful because I cant get off insulin. Generally I havent been eating more than a 3 carb meal just because I do spread them out so much.

That's cool, skip the ice cream and have a few strawberries with each 0 carb meal.
