INGREDIENTS
1 cup left over cooked chicken meat
1 cup enchilada sauce (low sugar)
 1 cup grated cheddar cheese
ripe chopped tomato for garnish
small piece purple cabbage for garnish
¼ cup finely chopped onion
2 la tortilla tortillas
salt & pepper to taste
½ cup sour cream
½ cup guacamole


Preheat your oven to 375 degrees. In a mixing bowl combine 1 cup of cooked chopped chicken, ½ cup of enchilada sauce, ¼ cup finely chopped onion, ½ cup of grated cheddar cheese and salt and pepper to taste, mix well.

Spread 1 tablespoon of enchilada sauce each into two baking dishes. Split the ingredients into two separate servings and place in the center of two tortillas. Roll up the tortillas and place seam side down in your baking dishes. Spread a tablespoon of sauce over each enchilada and sprinkle a ¼ cup of shredded cheddar cheese over the top of each. Bake for 20-25 minutes.

Remove from oven and drop a generous dollop of sour cream, then guacamole on top. Garnish with a piece of fresh tomato and a piece of purple cabbage. Serve with a green salad.

We ate these last night, I hadn't had them in a while and had forgotten how darn good they are. Very filling and rewarding. They really are delicious!

What brand of low sugar enchilada sauce do you use?

And is the guacamole your recipe, or is it store-bought?

I make my own guacamole.I mash the avocado.Add sour cream(mayo also works) about 2 tablespoons and a splash of lime juice.The lime juice or lemon juice will keep it from turning brown.I use Rosarita Enchilada sauce at 2 carbs for a 1/4 cup.Be careful of store bought guacamole they add sugar so check carb count.Fajitas are also a great low carb choice. ;)

Enchiladas can be made with whatever leftover meat you have in the fridge Binky.Pork, ground beef,chicken or shrimp/fish. ;)

Hi Marty

I guess it depends on the flavor that you want.  They have original *3 net carbs, green onion and garlic herb both have *4 net carbs,   I think they are my favorite out of all the low carb tortillas that I have tried so far, but be careful to buy the small ones and not the large.  I almost ended up with those in my cart.... they are twice as high with 6 net carbs  :o   If you are ok with that many, you would be better off having two of the small  ;) ;)

For tamales my guess ::) would be you need the lard to hold them together,but I have NEVER made them so be brave and go where no umpa has gone before!! :D :D :D

Umpa made this recipe for dinner last night. She used ground beef instead of chicken..... it was delish!
