Cheesy “Chicama”

1 serving = approx 5 g carbs

½ chicken breast sliced thin (0 g carbs)
2 T olive oil  (0 g carbs)
¼ cup chopped green onions (1 g carbs)
1/2 cup grated jicama (? 2 g carbs?)
2 T cilantro  (0 carbs)
½ tsp cayenne pepper (0.5 g carbs)
1 tsp taco seasoning (1.5 g carbs)
1/3 cup shredded fiesta blend cheese (<1 g carbs)

Heat olive oil in pan. Add green onions and sauté for about 2 minutes. Meanwhile, season your chicken breast slices with cayenne pepper and/or taco seasoning (if you don’t use the taco seasoning, you can save 1.5 g of carbs).  Add chicken pieces to the onions in the olive oil. Brown the chicken and then add the shredded jicama and cilantro to the pan. When jicama browns, pour the mixture onto a plate and add the shredded cheese.

Jicama makes a great base in many casseroles, this one is delicious from Owensmath  8)
