I printed this recipe off the website and modified it because I didn't want to waste full portions of ingredients.
1/2 pound ground chuck - 0
5 slices bacon (cooked extra crispy and crumbled) 0
4 ounces sharp cheddar cheese, grated 0
1 large egg lightly beaten (Carb Smart = 0)
did not use and bread crumbs
1/8 cup mayonnaise 0
1/2 Tablespoon Worchestershire sauce (Heinz = 0)
no salt
ground pepper to personal liking
and I added
1 Tablespoon mustard 0
2 Tablespoons SF Heinz Ketchup 2
Topping mixed together
1 Tablespoon mustard 0
2 Tablespoon SF Heinz Ketchup 2
no french onions or pork rinds
Mixed all together in a bowl and shaped into a loaf, I made mine square. I baked at 350 for 40 minutes and then added the topping and baked for an additional 10 minutes. I cut into 4 pieces for 4 servings for a carb count of 1 per serving.
Now, it was pretty tasty, but I would suggest baking in a dish with a "rack" to let some of the grease drain off. It was "floating" in grease since I didn't use any "bread" product at all. I had baked in a larger than needed glass dish and when the time was up I immediately removed it from the baking dish and placed on a serving dish with a paper towel to absorb a little more. Otherwise, I would fix it again. My personal preference would be to leave the bacon out of the meatloaf (which tastes like a cheeseburger) and put crispy bacon on top just before serving.
