Be forewarned, this meal is SO good you'll want to lick the plate. Total meal around 4 carbs
6-8 oz thick Grouper fillet cut into large bite size squares
3 strips of thick bacon cut in half
3 tablespoons Bertolli Alfredo Sauce
1 tablespoon lemon juice
quarter stick of butter
3/4 cup shredded purple cabbage.
1/4 cup bacon grease or peanut oil
cooking string
salt and pepper
Cut your fish up into large bite size squares and salt & pepper them. Lay 1/2 strip of bacon on your board and wrap the chunk of fish. Tie it off with a single piece of string. Continue until all chunks have been wrapped and tied.
Bring your grease up to heat on medium in a small non stick skillet, place your wrapped fish into the hot grease and begin frying. While the first side is frying shred 3/4 cup of purple cabbage and set aside, go turn your fish over
now mix 3 tablespoons Bertolli Alfredo Sauce with 1 tablespoon lemon juice and set aside, go turn your fish on end. Get yourself a serving plate and set aside. watch your fish so the bacon doesn't burn and turn over to he other end when ready. When all sides are good and brown roll the fish around in the hot grease for a few moments to insure everything is cooked through. Remove your pan from the heat and set the fish pieces on a paper towel. Pour out the hot grease into an appropriate container and wipe out the pan. melt 1/2 of your butter in the pan and stir fry the cabbage. Plate the cabbage and place the remaining butter and lemon Alfredo sauce into the skillet, bring to a bubble stirring along the way. Pour the hot sauce on the plate and place the bacon wrapped fish into the sauce...... garnish with a bit of basil or parsley.
I enjoyed the heck out of this meal. Any thick white fish or even big shrimp can be used. FINGER LICKING GOOD!
