Baked Tilapia or other white fish

Just tried this tonight and it was delish!! So I thought I'd share!! It's sooooo easy and yummy!!  ::)

Melt butter or margarine of your choice in a glass baking dish. Coat fish fillets in the butter by dredging through and turning the fish over. Sprinkle "Grill Mates Seasoning Garlic" flavoring and then top with  generous portions of freshly grated Parmesan and Romano cheese. Bake at 375 for about 15 min. or until fish flakes with a fork.

Yummmmmmmmm!!!! Hope you enjoy it!!  8)

I just bought some Lake Erie walleye.  I am going to try this.  It sounds yummy and easy.  Anyone ever try cooking fish on the grill in foil packets?  I think I am going to try your recipe mommab on the grill this week.  Will let you know how it turns out if I remember. 8)

Hi Beth! :)

Cooking fish on the grill is easy.

I like to use the "heavy duty" thick aluminum foil or aluminum baking pans.
Using either one, I like to cook with them open (not folded closed) and use a wood chip box on my gas grill to give more smokey grilled flavor to the fish.

Grills vary a lot on how hot they get.
If you use a gas grill, after preheating, drop the settings down to medium (@ 350 degrees) before cooking.
With charcoal, don't overdo the amount of charcoal so it doesn't get too hot.

On average, a one inch thick fish fillet will be fully cooked in about 8 to 12 minutes.
Check for done-ness with a fork like you would on the stove or oven.
Just be sure to keep an eye on them until you get the hang of it for your grill.

Walleye are a delicious white fish... I haven't eaten any in quite a few years. I envy you!... ENJOY! :) :) :)

Thanks Tony I will try with foil, keeping it open...most recipes call for it folded I suppose to create a steam effect, but I like the smokey idea.  We have a box with chips to use too.  Will keep my eyes on my walleye!

BTW, if you have a gas grill and would like an even smokier flavor, leave the lid closed and cook longer at a reduced temperature.

My Weber Genesis gas grill has independent controls for each burner. So I'll do this...

After the chips start really smoking, I'll reduce the heat and leave my wood chip box over a burner that will stay "ON" (toward the front of the grill) and the fish over one that's turned "OFF" (toward the rear of the grill).
That way, the smoke rolls around the interior of the grill from front to rear and really does a nice job!

Whichever way you do it, check your fish every 4-5 minutes so they don't overcook.

Thanks Tony sounds delish.  My husband has always wanted a Weber grill.  I think we will invest in one the next time.  I did buy him a smoker last summer.  When we have time we enjoy smoked chicken, ribs and salmon! :)

I have never found a method to impart smokey flavor better than that of a smoker.

They work well because the heat is so low but the smoke volume is very high.
This allows more time for more smoke to penetrate the food.

Parchment paper in the oven is another great way to cook fish.You make the packets like with foil. ;) I should probably have Doug do a video.You can make them ahead of time and pop them in the oven when you get home.No dishes to wash. ;)

Walleye was delish, very moist and tender with great flavor.  I will be making this again for sure.  Video is a great idea Umpa.
