Potato Bacon Soup
« on: July 05, 2011, 12:07:44 PM »
My family loves this when I cook it in the crock-pot, but obviously I haven't made it since last October. It's basically just potatoes, onions, chicken boullion, water, salt, and pepper. Then for the last half hour I add a can of evaporated milk, crumbled bacon, and some cheddar cheese.

Would turnips or jicama work for this? What about almond milk? Just curious ...

Jicama or yellow turnips.Jicama should be pan fried first to soften it up.The evaporated milk recipe is in the Bakery Book ;)

I eat alot of soups and stews especially during the fall.Very easy and very low carb ;) I usually make one if I am having a grazing day.
